Jalapeno Poppers of Champions

Followed the advice of others and placed a strip of bacon on top rather than wrapping it around. Added some shredded cheddar to the cream cheese mixture, too. Cooked for about 20 minutes @ 375 degrees.

Apple and Spice Cookies

Made these with my daughter today. They were super easy and super YUMMY!! If we had more of the ingredients on hand we would've tripled the recipe because we have sooo many apples! We didn't change anything other than using butter in place of the shortening and apple cider instead of juice because that's what we had in the house. Definitely a keeper!

Italian Sausage Soup

This is a great basic recipe that can be customized with whatever you have on hand. I made it with a mix of hot & sweet Italian sausage that I removed from the casings and browned. I used black beans because that's what I had. I made this more like a "stoup" -- a little thicker than a soup, thinner than a stew -- and mixed in a bag of Success brown rice just before serving. Family loved it!

Southern Gumbo

This was very good and very easy to make. The only thing I changed was that I used diced tomatoes instead of stewed, hot italian sausage, and no shrimp. Had my 13-year old son help me make it! Thanks for the great recipe.

Slow Cooker Lancaster County Pork and Sauerkraut

I use country style pork ribs seasoned with s&p and garlic, 1 large bag of sauerkraut rinsed, and a few quartered red potatoes. Family loves it! I'm going to try adding beer next time.

I've made this with flour and corn tortillas; sometimes both depending on how many I have on hand. Have never used corriander because I never have it. This is a family staple.

Slow Cooker Pork Chops and Rice

Family loved this! I adjusted based on what I had on hand: 1 1/3 c. brown rice, 1/4 c. butter, frozen diced onions, sliced mushrooms, bag of frozen peas, 1 can of chicken broth, few shakes of Worcestershire. Put the chops right on top of it all without browning them first. Turned the crock pot on high and checked on it after 90 minutes. Looked like it was going to be soupy, so I added a can of cream of mushroom soup to thicken it up. After another 60 minutes on high, it was done and I had to add a little bit of water because it got too thick! But it was very tasty. Next time I will cook it longer on a lower temp and not add the creamy soup and see how that works. Overall a very good recipe that is easy to customize.

Dutch Babies II

This was very good. I doubled the recipe and baked it in a glass pie plate. Not much flavor as is, so next time I'm going to follow other suggestions and add apples and spices. Great versatile recipe!

Slow Cooker Chicken and Dumplings

This was an AWESOME recipe! I used boneless, skinless chicken thighs, chicken broth instead of water, and added a box of mixed vegetables. Next time I will tear the biscuits up a little more (I halved them) and add more liquid because once the biscuits went in, the liquid totally disappeared. If I wasn't there to keep an eye on it, it would've burned. Tasted great! This is a keeper.
