Chicken Shepherd's Pie

I sauteed garlic with 2-3 sticks celery, added the chicken which I fork shredded. Then added 2 cups of water mixed with Chicken Bisto. I used mixed veges. I always add an egg yolk to my shepherd's pie potatoes. I'd never done one with cheese this way and YES the cheese is a hit. I am making this again.

Chicken-Fried Chops

Everyone liked them. I've done similar but never with a rub like this before and usually with mushroom soup. My son doesn't like mushrooms so thought I'd give this a try. I did as suggested, even cutting off the fat with kitchen shears. Since I didn't have ground mustard use a few splashes of honey mustard. I browned them. The mustard made them a yummy crispy yellow shade. I drained left over oil and added the can of soup to the fry pan to mix in with the bits of spices in the pan and brown a little (only a few seconds). Then poured it on top of the chops. I had only added about 2 tbsp water because my experience with soup like this you really don't need any water. My chops were thin and I listened to advise of others and reduced time. I cooked in the slow cooker on low for 4.5 hrs. The chops fell apart (in a nice way) once dished on beds of rice. I'll keep this recipe.

Ham and Cheese Bowties

We all liked it. I made it exactly as the recipe stated except I used 4 cups rotini. The only complaint was my garlic mincer was missing so I crushed it myself and some people got chunks of garlic which is more than they like. I think garlic is a good addition but I'll maybe use less or mince it better next time. We all went back for seconds.

Easy Salsa Meatloaf

Similar to one I made with chili sauce. I forgot the salsa had all the onion chunks in it and sure enough my son sat there picking them out. He wants me to go back to chili sauce. He did like this more than one with onion soup though. Well all liked it. I substituted oatmeal and used a full cup salsa. What I didn't get was the purpose of the cheese. It wasn't noticable so a waste. I think I would try putting a layer of cheese in the middle for an interesting effect or on top. I always top mine with ketchup, brown sugar and honey mustard which I usually put on about 15 min near the end. I also did 375 at 1 hour as others suggested. It was not as firm as a meatloaf should be but neither was my chili sauce one. Not sure how to change that as I also used 2 eggs this time. The colour wasn't a problem - not that pink. So, yes it was tastey and the biggest suggestion would be do something diff with the cheese or leave it out.

Broccoli Chicken Casserole IV

Husband and I are on reduced starch diet so important to find recipes with no pasta, rice, etc. in them. I made this and it was tasty. Followed recipe. Precooked the chicken and didn't add milk but added a splash of cooking wine. It was a bit "hot" and I don't know if it was because of the quantity of pepper or because the cheese I ended up using was Monterrey Jack mixed with Jalapeno pepper. I might reduced the seasonings or use the right cheese next time, but it was still good. Mine was not watery at all. *threw a few sliced almonds on top for variety. Made a nice reheated lunch the next day.

Cheese Lover's Chicken

Family liked it. I think I prefer Chicken Parmagian where it ends up crunchier because it isn't baked in sauce. But this was different and a put in the oven and forget about it kind of dish which is always fun to place on the table later. I sliced the chicken thin as I like sauce to cover all my chicken, not just the outside of a thick piece. I sauteed garlic in EVOO with a dab of butter and browned the breaded chicken pieces. Instead of my usual seasoned breadcrumbs I did as the recipe suggested and sprinkled on garlic powder, salt & pepper on top. I didn't have mozarella so used swiss and cheddar. I also used a jar of premade marinara sauce. I was surprised the cheese in the middle pretty much melted into the sauce. Ended up like a cheesey tomato sauce. My sauce was also a little more runny than I'd like so would perhaps add a can of tomato paste to the jar of sauce I used. I served it over spaghetti. I see the recipe doesn't say to do that. I thought it was a given but see another reviewer didn't do that. Because I sliced the chicken breast in half I also reduced the time to 40 min. I have a feeling like many dishes it will taste better tomorrow than it did tonight. So the 1 star missing was mostly due to the idea that chicken parm is my preference, how runny it was and that the cheese melted into the sauce more than expected.

Mother's Ham Casserole

Maybe I used more veges & potatoes but there definately wasn't enough sauce. I went back and made more to throw on top. The family all ate it, it is okay but a little bland. The other day I made Ham and Cheese Bowties and its sauce was tasteyer. Still, I'm thankful because it baled me out of "what to make for dinner" and I had all the ingredients on hand.

Leftover Chicken Croquettes

I wasn't sure what to expect so they were okay but not great like other posters raved about. I took hints from the other reviewers and added more seasoning. I I used 1/2 c chicken boullion along with the 2 eggs and it was plenty moist. I only used about 1/2 cup onion and found it too much for my liking. I was short on breadcrumbs and used 1/2 pkg. stovetop ground up but that may have dominated the flavour. My teens don't like onion and were picking it out unfortuantely. (I didn't use a food processor). I'd hoped my husband would love them. He said, "It's better than hamburger helper." I'm just happy to make something from scratch and use up my rotissery chicken from last night, which was exactly 3 cups. I don't think I would ruin chicken breasts for this. It is similar to chicken parmagian so I would have just breaded the breast. Would I make again? Perhaps I'd try altering the recipe again on leftover chicken and see what happens next time. Like another poster said, messes up the kitchen and a bit time consuming.

Breakfast Treat

I don't know if it's because the ham I used was left over maple falvoured or if it was the mustard, but there was a dominant flavour I didn't like. I followed as close as possible using the processed cheese but reduced the milk a little as we were out. Also I was unsure if you cook it covered or uncovered. I guess it depends on what you like in your house. I served it with baked beans which helped. I won't make it again.
