Panzanella Panini

Reviewed: Jul. 20, 2009
So glad I checked my email before lunch! This recipe came in the Daily Dish today, and I had all the ingredients on hand. In less than 10 minutes I was eating this delicious sandwich with fresh tomatoes and basil from my garden. Excellent proof that the best food is fresh and simple!

Breakfast Upside Down Cake

Reviewed: Mar. 27, 2007
This was really good. Following some of the other reviewers suggestions, I made some substitutions for my husband's taste and quicker prep time: 2 potatoes - shredded, 5 lg eggs, 3 Tbs. milk, 8 Tbs Hormel real bacon bits, no onion or peppers, a little hot sauce mixed in the eggs. Baked it all in a greased 7x11 glass baking dish for 23 minutes, and it came out nice and neat when I flipped it.

Venison Bacon Burgers

Reviewed: Jan. 18, 2011
These burgers have great flavor. The only thing I substituted was a little onion powder for the shallots because I didn't have any on hand. It's too cold to cook outside so I cooked these in a cast iron skillet - 4 min per side, then finished them in a 425 degree oven for another 4 minutes to make sure the centers were done. It was a great meal with sweet potato fries and baked beans. Thanks!

Shrimp and Asparagus Fettuccine

Reviewed: May 3, 2010
Very nice combination of flavors. It has a light and fresh flavor, and was quick and easy to make. I only cooked the asparagus for about 5 minutes before adding the tips and then cooked another 5. I like to cut the shrimp in half so the pieces get spread throughout the dish more. Next time I will probably skip salting the asparagus when it cooks and use more Old Bay on the shrimp to give it a little stronger flavor.

Southern Style Thanksgiving Green Beans

Reviewed: Jul. 20, 2009
Delicious! I made these for our son's graduation party and everyone loved them. I only cooked them for a couple of hours though or they would have been way too soft for our taste.

Slow Cooker Lemon Garlic Chicken II

Reviewed: Aug. 5, 2008
Easy and so delicious! Thanks so much for the easy weeknight dinner! This makes the whole house smell wonderful while it cooks. 3 hours was a little long on high; 2.5 would have been better for my crock pot. I served the chicken over jasmine rice cooked with some olive oil and Italian herb blend. I spooned some of the sauce from the crock pot on top, and it was so good. The amount of sauce was just right for 3 breasts. Next time I may try doubling it and thickening it to a gravy.

My pepper loving son liked this recipe more than my husband or me. It was good over rice.

A Jerky Chicken

This recipe was OK - not nearly as good as the jerk chicken we had in Jamaica - still looking for the perfect recipe!

How to Make Country Gravy

Reviewed: Dec. 6, 2014
This is my first time reviewing a recipe I haven't tried yet, but I decided to give this one a 5 to offset the 1 star reviews of those who don't read the description of the recipe (or the title apparently) and decide to review it anyway. This country gravy is also very similar to the one I've always made with an addition I can't wait to try - bacon! The recipe I've been using for years is great so added bacon can only make it better! I usually make mine with hot Italian sausage because we're not huge fans of breakfast sausage, but I've made it with breakfast sausage sometimes, and it's good both ways. I leave out the onions because my husband can't stand them. ;-)

Venison Pot Roast and Gravy

Reviewed: Nov. 25, 2010
This was great! I'd only eaten venison in chili and hamburgers so I was looking for a good first recipe to try for a roast we were given, and this was perfect. It makes a wonderful, thick gravy that also was delicious on the roasted potatoes I made as a side dish. I made the grill seasoning using the suggestion in rua's review, and it was great. I will be making this recipe again and also using it for beef. Thanks!

Braised Beef Short Ribs

Reviewed: Dec. 26, 2007
This was good, but I wouldn't do the extra work it took to prepare this again because it ended up tasting like a basic pot roast which is easier to make.

Lasagna Spirals

Reviewed: Dec. 13, 2006
This was very good. The first time I used about 1/2 t of nutmeg, 1 t of basil, & added 1 t parsley, & left out the green onions. I also added about 1/4 c romano to the filling and some salt and pepper. The 2nd time, I omitted broccoi & used 10 oz. of chopped spinach and about 3/4 lb. of browned hot italian sausage crumbled. My son said it was too much spinach so I would probably used 1/2 pkg next time.

Marinated Grilled Shrimp

Reviewed: Oct. 9, 2006
Very tasty! I usually make extra marinade and simmer it to serve over orzo. Sometimes I simmer the shrimp in the sauce instead of grilling. Delicious either way!

Baked Orange Roughy Italian-Style

Reviewed: Nov. 16, 2004
This is the first breaded fish recipe I've tried that actually has lots of flavor. My whole family loved it - even my son who is not a big fish fan! I used tilapia and all parmesan since I didn't have any romano on hand. I will use a little less salt next time. 12 minutes baking time was perfect for the 1/2" to 3/4" filets, and the fish turned out moist. I served it over a basmati rice medley cooked in chicken broth and olive oil. I'll be making this for my in-laws next weekend!

Beef Stew VI

Reviewed: Sep. 23, 2014
This is my new favorite beef stew recipe! I did make a few changes like tossing the beef cubes with flour, salt, pepper, and garlic powder before browning them. I omitted the onions and celery because my husband doesn't like them and added a couple more potatoes. I left everything else the same and the combination of seasonings was very good. The only thing I would do differently if I was only going to cook it as long as recommended is cut the amount of liquid. I cooked mine longer than 2 hours and still had to add more cornstarch and cook it without the lid for the last 20 minutes or so to get it to thicken up. I think 3 cups of liquid would have been plenty.

Cheese and Bacon Potato Rounds

Reviewed: Sep. 22, 2014
Brought this to a party, and it was a big hit. I just made a few changes. I sliced the potatoes about 1/4" and tossed them in a bowl with salt, pepper, and some garlic powder. Then I poured the melted butter over them and mixed them well. I also used real bacon bits instead of cooking bacon and crumbling it. I served these with a bowl of sour cream for dipping/topping, and they were gone in a flash! Thanks for an easy, tasty appetizer recipe that I'll be making often!

Omelet in a Mug

Reviewed: Sep. 13, 2011
I made this with eggs, cheese, and canadian bacon, and it was very good. I gave it 4 stars because microwaved eggs have a slightly odd texture and the only time this method really saves is a few minutes in the cooking.

Bacon-Roasted Chicken with Potatoes

Reviewed: Apr. 23, 2010
This was really good. I just made the chicken without the potatoes this time because I had leftover baked potatoes from the night before. I used all thighs, removed the skin, and layered the bacon on top of the thighs as other reviewers suggested. I sprinkled the seasoning blend over the top, and the chicken was juicy and the bacon crisp after 50 minutes. The juices were delicious with crusty dinner rolls. Can't wait to try it again with the potatoes!
