Baked Orange Roughy Italian-Style

This is the first breaded fish recipe I've tried that actually has lots of flavor. My whole family loved it - even my son who is not a big fish fan! I used tilapia and all parmesan since I didn't have any romano on hand. I will use a little less salt next time. 12 minutes baking time was perfect for the 1/2" to 3/4" filets, and the fish turned out moist. I served it over a basmati rice medley cooked in chicken broth and olive oil. I'll be making this for my in-laws next weekend!

Easy Shake and Bake Chicken

My family really liked this chicken. I used boneless skinless chicken breasts and unseasoned bread crumbs instead of flour. I cut the cooking time to 30 minutes total which was good for the thicker breasts. The thinner ones were a little dry - 25 min would work better for them.

Chuck's Favorite Mac and Cheese

This is delicious and so easy to make! Made a few changes to lower the calories - used 8 oz. lowfat cottage cheese, light sour cream, and only used 1/2 the bread crumbs & butter for the topping. I also used whole wheat rotelle pasta. This tastes almost exactly like my family's favorite mac-n-cheese recipe but is much easier to make - thanks!

This dish is very good. I followed the advice to make extra sauce - 3x the amount of butter and parsley, 2x wine and cheese, and 4 cloves of garlic.

Delicious! Everyone loved it! The only change I made was using a whole cup of tomato sauce and mashing the diced tomatoes some after the simmering b/c my husband and son don't like too many chunks.

Marinated Grilled Shrimp

Very tasty! I usually make extra marinade and simmer it to serve over orzo. Sometimes I simmer the shrimp in the sauce instead of grilling. Delicious either way!

Lasagna Spirals

This was very good. The first time I used about 1/2 t of nutmeg, 1 t of basil, & added 1 t parsley, & left out the green onions. I also added about 1/4 c romano to the filling and some salt and pepper. The 2nd time, I omitted broccoi & used 10 oz. of chopped spinach and about 3/4 lb. of browned hot italian sausage crumbled. My son said it was too much spinach so I would probably used 1/2 pkg next time.

Breakfast Upside Down Cake

This was really good. Following some of the other reviewers suggestions, I made some substitutions for my husband's taste and quicker prep time: 2 potatoes - shredded, 5 lg eggs, 3 Tbs. milk, 8 Tbs Hormel real bacon bits, no onion or peppers, a little hot sauce mixed in the eggs. Baked it all in a greased 7x11 glass baking dish for 23 minutes, and it came out nice and neat when I flipped it.

Chipotle Shrimp

This recipe was OK, but the chipotle flavor was overpowering for us, and there wasn't enough sauce for the rice. If you really like chipotle you'll love this recipe.

Slow Cooker Lemon Garlic Chicken II

Easy and so delicious! Thanks so much for the easy weeknight dinner! This makes the whole house smell wonderful while it cooks. 3 hours was a little long on high; 2.5 would have been better for my crock pot. I served the chicken over jasmine rice cooked with some olive oil and Italian herb blend. I spooned some of the sauce from the crock pot on top, and it was so good. The amount of sauce was just right for 3 breasts. Next time I may try doubling it and thickening it to a gravy.

Simple Ranchy Breaded Fish Fillets

This dish was very tasty. The only thing I would do differently next time is use thinner filets. Mine were thick (closer to a steak than a filet), and the flavor was much better on the thinner pieces.

Quinoa Pudding

This is a delicious breakfast for anyone who likes cream of wheat or oatmeal. The only subs I made were 1.5 c of skim milk + .5 c whole milk, honey instead of sugar, and no butter. It was really good topped with chopped pecans. Thanks!
