Tomato, Basil, and Feta Salad

This is so good! I had Bradley tomatoes and basil from my garden and cucumbers from my mother's garden. I used Vidalia onions. My husband isn't fond of cucumbers and he loved this recipe!

Mediterranean Stuffed Chicken

This is a wonderful recipe. It's quick and easy if you don't pound the chicken as others suggested. Just slit one side of chicken breast open to make a pocket and stuff. No toothpicks or string needed. Bake for 35 minutes. Everyone loved it!!!

Absolute Mexican Cornbread

This is a fantastic recipe. I only used 1/2 cup of sugar and I added the whole can of green chilis. Other than that I followed the recipe as written.

Tuscan Soup

Great soup recipe! To save time, I used 1 lb. of ground spicy Italian sausage and a 6 oz. bag of unchopped, baby spinach. I didn't peel the potatoes because the recipe didn't say to peel them. Since I used more sausage than the recipe called for, I used 4-14 oz. cans of chicken broth (reduced sodium). As many suggested, I added 3 crushed garlic cloves and red pepper flakes. I like creamy soup so I added 1 cup evaporated milk and 1/4 cup heavy cream and topped off each bowl of soup with parmesan cheese.

Best Marinara Sauce Yet

This is awesome! I omitted the salt (as always) and didn't hand chop the Italian parsley or mince the garlic (used 3 cloves instead of 1). I put both in the food processor and let it do the work then added the other ingredients as directed. Other than that I followed the recipe as written. Fantastic!!!

Chicken Florentine Casserole

This was good but I thought it could be much better (and faster) if you skipped the first step. Baking the chicken on a baking sheet makes it dry and bland. I made it again last night and it was so much better (5 star). I sautéed the spinach and mushrooms in a little butter and placed in bottom of dish then placed the uncooked chicken on top, added the sauce and topped it off with real crumbled bacon and baked for 25 minutes at 350. Removed from oven and topped with 1 cup mozzarella and continued baking for 10 minutes at 350 (not 400). It was so moist and flavorful!

Cauliflower Casserole

I gave this 4 stars because I didn't change the ingredients. It's a good combination. I knew I'd end up with a goopy mess by mixing bread crumbs and parmesan cheese with melted butter so here's how I made it: I steamed the cauliflower instead of boiling it. Added the red pepper flakes to the melted butter and poured it over the cauliflower then lightly sprinkled cauliflower with bread crumbs (about an 1/8 cup) then sprinkled on 1/4 cup parmesan cheese and topped it off with 1 cup of extra sharp cheddar and baked as directed.

Coffee Liqueur

This is great! I made this and Original Irish Cream on Christmas Eve. I poured some Coffee Liqueur in a rocks glass and topped it off with Irish Cream with one cube of ice. Dessert in a glass!

Original Irish Cream

I made this on Christmas Eve. It's sooooo good! After reading the reviews I made the following changes: 1/2 c. heavy cream and 1/2 c. milk instead of 1 c. heavy cream, 1/2 tsp almond extract instead of 1 tsp, & 1 1/3 c. Tullamore Dew Irish Whiskey instead of 1 2/3 c. Awesome recipe!

Chicken Supreme III

This is very, very good and easy. I had left over chicken breast and wanted to make something different so I tried this recipe. After cooking the onion I stirred in my leftover shredded chicken breast and added some steamed broccoli to make it a complete meal. I followed the advice of others and used chicken broth instead of water. I used herb seasoned stuffing mix. To save time I put all the chicken mixture in the bottom of dish, topped it with the stuffing mixture, then poured the soup mixture over the top. Baked it uncovered for 25 minutes, removed it from oven and covered it with the cheese then baked for 10 more minutes. Next time I going to add carrots and broccoli!

Honey Baked Chicken II

I used boneless, skinless chicken breasts and thighs with skin and bones instead of a whole chicken, dijon mustard and cut the butter in half. My family kept asking when it would be ready because it smelled so good while baking - ABSOLUTELY DELICIOUS!!! Thanks for sharing.

Baked Orange Roughy Italian-Style

I made this fast, easy recipe again last night and it was great! Although the recipe is wonderful as is, I experimented a little - instead of just using melted butter, I sautéed 2 crushed garlic cloves (instead of garlic powder) in butter and a little olive oil. I steamed fresh broccoli while the fish was baking and less than 20 minutes later sat down to a delicious meal. Thanks so much for this recipe.

Garlic Chicken

I made this last week and it was sooooooooo yummy. I left the printed recipe on the kitchen counter next to the stove. The next morning I found the recipe next to my coffee maker. My husband wrote "Two thumbs up!" on the bottom of the page. I'm making it again tonight with Garlic Sauteed Artichokes - another 5 star family favorite. Thank you for this recipe :-)

American Lasagna

This is the worst lasagna I have ever made or eaten, including frozen lasagna. My husband, who is not a picky eater and loves my cooking (and brags to everyone that he is married to a great cook), told me to throw it out! It was way too dry even after adding the 8 oz can of tomato sauce as most suggested, the cook time is wrong (at the top is said cook for 90 minutes and at the bottom it said to cook for 30 minutes???)and the sauce was bland (maybe that's why it's called American instead of Italian). Not sure how it got a 5 star rating from so many others when the recipe had to be altered by most that liked it. If it's really a 5 star recipe you shouldn't have to change a thing! What a waste of time and money. YUCK :-(
