Cream of Mushroom Soup

Just OK! Added less broth because the mushrooms made quite a bit of juice when sauteed, even after rinsing and letting them sit on a towel on the counter for a few hours. I also used fat free 1/2 and 1/2. I've been adding to it to try and jazz it up a bit. Doesn't really taste like much. Maybe my mushrooms had no flavor?? Might try again because it is easy!

Lighter Banana Muffins

WOW!!! These were better than I thought they would be! I took the suggestion from others and added a teaspoon of vanilla, 1 extra banana, and some walnuts! They were delicious!

Watermelon Fire and Ice Salsa

WOW!!! I was not sure of this at first but after I made it and let it sit for a while I tried it. Couldn't stop eating it! My watermelon was not that sweet so I added a little sugar to taste!! Really Awesome for a hot summer day!

LOVE IT!!!! Use half the beans and add more meat! Make it for my husband to take to work and my crockpot always comes home empty!!!! Serve with sour cream, cheddar cheese and chopped onion too!

I wish I could give this 20 stars. This is AWESOME!!! Doubled the mussels and left out the clams. Also substituted clam juice for the water. Used tilapia instead of Cod. Make sure you have lots of bread! Don't leave out the crab meat - I only used an 8oz refrigerated jar. Try to find claw meat, if price is an issue. It really makes the broth. I used a sweeter local wine. Just delicious!

Made two so I could have some leftovers - Both pies were gone in an hour! The house smelled SO GOOD while this was baking!!! A KEEPER RECIPE - I did add more cheese though. Yum!!!

Cream Cheese Penguins

The kids loved them so much they wouldn't eat them because they were too cute!!! Really adorable! We saved a few for the kids and the adults ate the rest! Use a piping bag to fill the body - makes them very easy to make. Also, turn a small bowl upside down and cover with cream chees to make an igloo! Fun, fun, fun!!!

French Onion Soup Gratinee

I doubled the recipe and used 9 onions. Might add a few more next time!I LOVE onions... I used Sutter Home Family Vineyards White Merlot wine. Has a nice flavor in soups, not too dry and pretty - inexpensive. Absolutely DELICIOUS!!!!! Glad I doubled it - won't last long!!!

Baked Pineapple Casserole

A keeper!!! A new Easter favorite. Didn't change a thing! I tripled the recipe, had 26 people for dinner and by the time I got to eat, it was gone! Had to take a spoonful from my husband's plate! YUM!!!

Seafood Lasagna I

I made quite a few changes and this was delicious! Used Ricotta instead of cottage cheese, Added 1/2 cup of shredded mozzarella to each layer, substituted equal amount of bread dipping spices for basil. Substituted 1 can of cream of shrimp soup for 1 of the cans of cream of mushroom. ***Also a big tip is to make sure your seafood is dry, especially scallops. I rinse all my seafood and put it in a plastic strainer over a larger bowl, covered in fridge for a few hours. Wet scallops will water down a dish like this! Make sure scallops are dry-packed. I also added a lot more parmesan cheese. Will make again!
