Blonde Brownies III

I'm not sure what others were talking about, when they say the recipe came out dry. My guess is that they overmixed after adding flour. My batch came out wonderfully. I did jazz it up just a bit though... I added about 3 TBS of good quality instant coffee powder 2 TBS heavy cream, and used milk chocolate chips. I baked it in a 9x13 pan for about 35 minutes. They turned out moist, chewy, and really flavorful! Good job, GREAT recipe!

Zaz's Oatmeal Shortbread

When my Grandfather passed on, I became THE cookie baker and candy maker of my entire extended family. Which means... I bake and ship a LOT of cookies. I began using this recipe several years ago and it has become my absolute favorite. These cookies are easy to make, freeze wonderfully (both prior to baking and after), and are GREAT for shipping as gifts. The only changes I make to the basic recipe is that I use regular (always good quality) salted butter, and freshly ground sea salt, in place of table salt, which makes a subtle but amazing difference in taste. When baking for home, I wrap stacks of cookies with aluminum foil and store in the freezer, taking them out as needed. this way they stay super fresh and yummy! If I am baking for Christmas gifts, I add dried cranberries, and after they cool, I either drizzle with melted chocolate, and/or dip half of the cookie in white chocolate. Everyone RAVES about them! Other ingredients I add at times are mini chocolate chips, raisins and spices. A little tip to those who mention issues with their cookies turning out greasy... Try refrigerating the cookie dough for a couple of hours before baking. After baking, allow them to cool on plain brown paper (I save all of my paper grocery bags for this purpose). The paper will absorb any excess fat in the cookies, and it's a great way to recycle! :o)

Creamy Macaroni and Cheese

Thank you for this recipe.. My family and I absolutely love it. It makes enough for 5 hungry people and is the perfect 'comfort' food. It tastes amazingly like stouffers, but my family likes it even better. The only change I make is leaving out the mustard. Just a personal preference. Again, thank you! :o)

Sweet and Sour Sauce I

A good basic sauce recipe. I used it as a 'foundation' for the additional ingredients I added to spice it up a bit. I added a half cup diced pineapple, with juice, 1/4 cup diced green pepper, 2 T diced jalapeno peppers, about 2 TBS extra vinegar and 1/2 cup extra water (to offset the sweetness of the pineapple), and freshly ground black pepper to taste. It turned out great and the family loved it! :)

Kolaches II

YUMMY! I made fresh peach pie filling, and an apple cranberry filling to top them with. Also, I made them MUCH bigger than suggested. I used around 1/3 cup dough per kolache and baked them on a silicone liner (keeping a close eye on the bottoms because they definitely do brown more quickly than one might plan on). After removing from the oven, I drizzled them with glaze and then ducked while the family ran me over to get to them. :) They turned out tasting like something half way between a donut and a danish. Soft, sweet and lovely. Next time, I'm going to put some cream-cheese filling (like one would make for a cheese cake, only thicker I think) under the fruit filling. Thank you for the wonderful recipe!
