World's Best Lasagna

I made this Christmas Eve. These are the tips I adopted from reviews that I believe made a difference. 1. Use 1 lb. beef 2.Add a vegetable or two (mushrooms, olives) 3.Boil pasta 5 min, then remove from heat and let pasta sit in hot water 2 min. If pasta is too soft your lasagna will be runny. 4.BUY CHEESE from an Italian market!! Whole milk ricotta, nothing like it!! 5.Simmer for 2 hours! And build lasagna the night before so the spices can meld.. mmmmm!! This was delish!!!!!!! Takes awhile, great for a special occasion!

Peppered Shrimp Alfredo

So delish! Cayenne pepper makes my day happier. I used slightly more than the recipe called for because I love SPICE! Also, I used an olive oil sauce instead of the alfredo. I am sure the alfredo sauce is delightful but I just wanted a slightly lighter taste. In a small skillet I warmed 6 minced garlic cloves, 1/2 cup of oil, and parmesan over med low heat and combined it with shrimp and pasta. The cayenne looks overwhelming in the skillet but mixes with pasta well!

Beef and Bean Chimichangas

Make these!!!!!!!!!!!!! I also built the chimis with spanish rice inside. We made some chicken and some beef. Both fantastic! If you don't have butter on hand, spray canola cooking spray on top to make the tortillas crisp. Also, garnish with avocados because WHY wouldn't you!!?? =) Adios!

Chuck's Favorite Mac and Cheese

Yum!!! Guess what!!?? We added a small can of green chilis and a few diced jalapenos to this and it made it go kung pow!! I would do a layer of the mac and cheese into the bottom of the pan... sprinkle some bread crumbs.. then pour the rest of the mac and use the remaining read crumbs so that the crumbs aren't overwhelmingly stuck to the top noodles only. Love this!! Would be great for a movie night with friends with some beers!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

I am not a big ginger fan so I made this without. Also, I subbed kiwis instead of pineapple (since I have a pineapple allergy). The kiwis were amazing with the mango and avocado! This is a fairly sweet dish but the cayenne pepper and jalapenos balance the flavors nicely. Don't skip the cilantro with this dish! Great meal for a hot summer night... very fresh and light.

California Melt

Yum!!!! This is easy and delicious. Great for a quick dinner that still looks and tastes impressive. Add a caesar salad for some crunch. Also, I used kalamata olive artisan bread from the bakery because I think good bread in a dish like this makes all the difference.

Kevin's Sea Shells

I made this for Valentine's dinner. I get bored of the same old dinners and this recipe was very inventive!! It is a little spendy so definitely for a special occasion or for the wealthy! =) I was hesitant to use sour cream because I am not a huge sour cream fan and thought that it would be weird with seafood, but surprisingly the swiss cheese mixed with it really compliments the dish very well!! For the sauce that you cook and spread on top, I would use a little less flour, and a little more butter and white wine and add a few garlic cloves to the mushrooms.. The amount of flour called for makes the sauce cakey and has a weird flavor in my opinion. Over-all a fantastic idea and who doesn't love shrimp!!! Yum! I served this with sourdough artisan bread.

Oven Scrambled Eggs

This idea freaked me out a little, so what better time to test it than on a birthday brunch for my Mother with the whole family attending(sarcasm). I cut the recipe in half and used a smaller pan as I was cooking other things for breakfast as well and it worked great! I sauteed peppers and shiitake mushrooms with garlic and butter first and added them with cilantro and cheese to the eggs before I cooked them. You could really add anything to this recipe depending upon your taste preferences and I suggest doing so; sausage, jalapenos, green chilis, bacon, etc. Who wants to eat scrambled eggs with nothing in them? No one. Fantastic idea that is pretty fool proof!

Garlic Shrimp Linguine

This recipe wasn't my favorite dish I've found on allrecipes... but my boyfriend loved it! Different taste buds I suppose. I added crimini mushrooms and broccoli to it which I am glad I did. The sauce was a little bland in my opinion. Probably because it is light and not a heavy alfredo sauce that I am used to, ha! I guess when you sacrifice calories you sacrifice taste, there is no way around it. Also, make sure to AT least double the sauce proportions. I'm out!
