Slow Cooker Chicken Stroganoff

Easy and delicious. I used unsalted butter instead of margarine, low fat cream cheese and low sodium cream of chicken soup. I served over Trader Joe's lemon pepper papardelle -- and I topped it all with shaved parmesan.

Garlic Shrimp Linguine

Delicious and simple. My modifications: 3/4 lb linguine, 1 stick unsalted butter, plus 2 T. herb butter, 1 red pepper, sliced thinly; 8 oz sliced mushrooms; 5 - 7 cloves garlic, minced; 3/4 c. white wine; 3/4 c. grated parmesan cheese. while cooking linguine, saute mushrooms, red pepper and garlic in butter. Add wine, add shrimp, saute about 4 minutes. Remove from heat, add parmesan. I didn't add lemon juice to this though I considered it. One post said not to add lemon juice until the very end because it can toughen the shrimp.

World's Best Lasagna

Restaurant quality! I used sweet Italian turkey sausage and thought the flavor was not compromised. The sausage came in a 1.25 lb. pkg and I had a 1 lb. package of beef, so this easily made enough sauce for two lasagnas (I did double the cheese though.) I also recommend using fresh basil in the sauce and adding about 2 - 3 T. fresh basil to the ricotta filling. Additionally, I grated some fresh nutmeg onto the ricotta filling.

Spanish Rice II

Wonderful! Like others, I used chicken broth, a couple of cloves of garlic, a yellow pepper, and about a teaspoon of cumin -- I had a little longer cooking time because I used brown basmati rice.

Grilled Chicken Over Spinach

The green onion adds a nice color to this dish. Good use of the ingredients I happened to have in the refrigerator -- I also happened to have fresh thyme, which was a nice addition. Next time I would try to marinade the chicken for a longer period.

Egg Salad Sandwiches

Easy and good. Like others, I added fresh onion instead of dried -- I used it right away and everyone loved it -- I served with Romaine lettuce leaves on fresh whole wheat bread.

Sesame Green Beans

Very tasty. I sauteed 2 cloves of fresh garlic and a package of sliced portobella mushrooms, then added a little sesame oil and sauteed the sesame seeds, then added the green beans, and finally, the chicken broth. Delicious!

Black Bean and Corn Salad II

Incredibly wonderful! Even my son who claims he doesn't like cilantro went back for seconds! I also followed another's suggestion and used Trader Joe's frozen roasted corn -- I also used their canned black beans.

Chicken Curry Party Salad

My whole family enjoyed this, including my picky 14-year-old. I used low fat sour cream and mayo, omitted the black olives, added sliced green grapes and substituted farfalle pasta for the elbow macaroni. Delicious! (And there were leftovers for lunch tomorrow!)
