Quick and Easy Paella

First let me say the only thing I changed in the recipe is that I used 6 ounces of bulk chorizo because that's what I had on hand. Otherwise, I followed the recipe and technique exactly. This recipe was awesome! I was a little worried about shrimp being overdone at 20 minutes in the oven, it was fine but don't leave it in any longer. Don't skimp on simmering the shells with the broth, this added a lot of flavor! Saffron is pricey but please invest if you can. It does make a difference. The rice in the dish comes out slightly firm, it is not runny or creamy like risotto, it is nice and fluffy. I used a cast iron skillet. This recipe is a keeper! Thanks!

Peanut Noodles

I followed recipe except I used crunchy peanut butter and low sodium soy sauce, eating it warm now and I really like it. There is plenty of sauce to cover 12 oz of noodles in my opinion. I think it has much more flavor than the boxed peanut noodles from the grocery stores. Peanutty and spicy flavors balance well.

Chef John's Scones

Made this recipe this morning. This is hands down the best scone recipe I have tried, and I have tried quite a few! The only change I made was to add blueberries instead of currants. Family has all gone for the day and so have my scones! Nice crunch on the outside and soft inside.

Creamy Hot Chocolate

This is the ONLY hot chocolate my family will drink! No powdered hot chocolate in my house. I serve it with marshmallow cream or real whipped cream sweetened to taste. This is very rich and is a much demanded treat when company comes.

Vinegar Pie VII

Vinegar pie is a very old recipe and a very good one, built for economy, as most people have these ingredients on hand. The taste is sweet and citrusy. I used 1 tsp orange extract and a sprinkle of orange peel this time instead of lemon. It tasted sort of like a lightly flavored dreamsicle pie. This recipe did not fill my pie shell up as far as I would like, but next time I will try multiplying recipe by 1/2 and adding meringue. Great old recipe, Thanks!

Brown Butter Cookies

These are so awesome! If you like your cookies a little thicker in the middle, add a bit more flour until batter is the consistency of peanut butter. I added a little orange peel to batter and frosting.

Chicken Tikka Masala

Oh my! This was wonderful! I omitted the salt completely, doubled the sauce. I didn't cook on the grill, I pan seared the chicken after marinating, poured off the little bit of liquid it made, then poured the sauce in with chicken and simmered for 20 minutes. I followed the recipe otherwise. It was nice and spicy, not too hot if you are used to hot spicy food. Served with home made naan.
