Beth's Spicy Oatmeal Raisin Cookies

These cookies were inhaled within a day! I threw the ingredients in my ninja (ordered it from tv & hardly use it, so thought i would for this). I kept them in for 10 mins & cooled for 2 mins on sheet & 10 on rack. Next time will keep in for 11 mins just for color. I also pressed them down just a tiny bit before baking.

Beef Spinach Hot Dish

I know how people hate when others change the recipe but oh well! you will get over it! My guy didn't care for this but my 15 month old & i did. I live in the country & used ingredients i had on hand. Fresh mushrooms instead of canned & roasted garlic cream of mushroom soup. Also only had canned tomatoes & chiles (rotel) which i thought gave it a little more flavor that would have been lacking. Next time i will try cubed chicken instead of the ground turkey i used. All in all it was perfect for my son & that is why it's a keeper.

Pineapple Pretzel Fluff

Must admit i was skeptical at first but this satsfied my craving for a quick sweet fruity treat. Yum! Next time i will add some halved maraschino cherries, toasted almonds & coconut, and some lemon juice.

Chicken Pot Pie II

This actually did taste homemade & I was very pleased. My picky husband tried to eat the entire pan! I added some thinly cut carrots, 1 diced potato(zapped it for about 2 mins in the microwave to soften it),& a little bit of onion. I added a bay leaf in the broth as the chicken was poaching & added poultry seasoning to the entire filling. I used 2 pie crusts, one for the bottom & one for the top. Oh I used a 9x13 pan. Next time will make individuals for different variations.

Fast and Friendly Meatballs

This was a basic meatball recipe that has alot of versatility. I used Jennie-O lean italian seasoned turkey breast which didn't need alot of extra seasonings. I did add garlic, onion powder, bread crumbs, parmesean cheese & italian parsley just because. I cooked in the oven for about 15 mins, then added to my crockpot(low setting) with my own spaghetti sauce. We were having spaghetti & meatballs for dinner. It was wonderful & my picky husband never realized he was eating turkey instead of ground beef.

Artichoke & Spinach Dip Restaurant Style

This was absolutely heavenly! It was so good, i wanted to eat some with my coffee this morning! The only things i did different was cut the amount of alfredo sauce used ( i like it more chunky) & i added 2 more cloves of garlic, just because i love garlic. I also used freshly grated mozzarella & parmesean. It was quick & clean up was a breeze! A definite keeper!

Savory Turkey Gravy

I was very proud of myself after sampling this gravy. A few variations though. I used refrigerated turkey stock I made last night & instead of flour used a few tablespoons of cornstarch in stock(instead of the water). I also added a few tablespoons of cream of celery soup(rather have used cream of chicken, didn't have)for flavor. This perfected my turkey dinner & my boyfriend absolutely loved it! My house still smells great! Thanks Veronica!

Brown Sugar Sauce

It actually turned out better than I thought! I had made a applesauce spice cake & was looking for a simple sauce. It was not too thin or thick but was darker than expected.Might try a little cream with it next time.Overall a good sauce!

Corn Dog Casserole

I woke up Friday not feeling too great & wanted to make something that would last untill Sunday dinner. I found this SUPER recipe. The name sounded intriguing, but my boyfriend was willing to try it. It was fabulous!!! We couldn't believe how much it tasted like a real corn dog! I only put a dash of sage in, added more cheese, and scaled the recipe down to 6. When I feel better I plan on throwing a Fair themed dinner party featuring this casserole! Oh yeah, an extra 10 minutes did help!
