Turkey and Quinoa Meatloaf

AMAZING!!! Absolutely loved this... served it to my mister who RAVED about the flavor. Used a topping that was posted by another reviewer that called for much more brown sugar and ketchup since it was more like how I remember it being like when I was little... Bottom line, if you're not planning on making this for dinner you're missing out!!!

Thai Peanut Chicken

LOVED THIS... but made some modifications. I doubled the sauce as recommended in other reviews. I also substituted rice vinegar for the white wine vinegar and added crushed red pepper flakes to boost up the heat. I don't care for ginger so I left it out completely. I cooked the chicken almost completely and then removed it and placed it on a plate with an aluminum foil tent to allow it to keep cooking in its own juices. Then I added the broccoli, some red bell pepper, double the scallions, carrots and water chestnuts... cooking until the broccoli and carrots were just softened. Then I added the chicken and all the juices that collected back to the pan, added the sauce mixture and simmered for just a minute or two to bring all the flavors together. It was WONDERFUL!!! Will definitely make this again!!!!

Baked Scallops

LOVED IT!!!! We used Panko instead of regular bread crumbs, a shallot and fresh garlic instead of the dried spices and placed the dish under the broiler once cooked to get that extra crisp texture. Will DEFINITELY be making this again!!!!

Chicken Foster

When I saw this recipe I was very excited. Bananas Foster is one of my favorite desserts and this spin-off sounded interesting and promising! I was, however, disappointed in this dish. I had a hard time getting it to ignite and burn out the alcohol. In the end it tasted too sweet for a main course and definitely still had some alcohol punch still present.

Lemon Dreams

I added these absolutely "Dreamy" lemon cookies to my list of traditional Christmas treats, and these ended up being the BIGGEST HIT!!! I ended up rolling the balls in my 3rd batch (yes, the first two were eaten up too quickly) very small, almost the size of a marble. This way you can eat 3 or 4 and not have the guilt. Sooooo DELICIOUS, Thanks!!!!

My family loved this recipe! I used canned chunk chicken from my local warehouse club, and used my quick homemade pie crust. Thank goodness I decided to make two because they both went quick!

Annie's Fruit Salsa and Cinnamon Chips

I was in a pinch and needed something special to serve at a baby shower that fell into my garden theme. This salsa rounded out my menu plan perfectly. From the tartness of the apples to the sweetness of the chips, this concoction should not be missed.
