Lola's Horchata

Recipe came out very good, a little too much cinnamon - instead of 1 TBSP, try 1 tsp. I refrigerated horchata for about 6 hrs then strained through a cheesecloth twice. MUCH BETTER THAT WAY!!

Lemon Garlic Tilapia

I was extremely impressed with this recipe. Even my mother loved it and she HATES garlic! Very quick and easy to prepare and it came out delicious. I'm pregnant and I'm trying to incorporate more low-mercury level fish into my diet. I am definitely saving this recipe and will be cooking it again! Yum!

Baked Potato Soup V

Baked potato soup was absolutely delicious! I made a few minor changes... instead of cooking the potatoes in the microwave I peeled and quartered them, then boiled them for 10min on the stove (Cooking them in the microwave THEN scooping out the flesh seemed too time-consuming). Then I mashed them leaving them a little lumpy. Also, instead of using bacon bits I cut strips of uncooked bacon into small sections then fried them on the stove. *When reheating leftover soup ---> Adding a dash of half & half or milk before microwaving or reheating on a stovetop gives it a more soup-like consistency because after being refrigerated it thickens up* I personally think it tasted better the second day :-*

Peanut Butter Cup Cookies

Great recipe for the "peanut butter lover"... I followed the recipe exactly however I did use paper mini-muffin cups. It makes it easy to remove from the mini-muffin cooking tray :)

Macadamia Nut Chocolate Chip Cookies

These cookies were DELICIOSO! My mama and abuela absolutely loved them! I made a few minor changes... I used PAM spray instead of vegetable shortening and I baked the cookies for 8-9min instead of 10-12min for a softer result.

Pecan Tarts

The pecan tarts were tasty. They would go very well with coffee. The outer crust was a little dry. I would recommend when "pressing into the bottom and up the sides" of the mini-muffin tray make sure to make the crust as thin as possible to cut down on the "dryness". Also, instead of greasing a mini-muffin tray, I recommend using paper mini-muffin baking cups (1 3/4 in.). No grease or PAM spray necessary!
