Tasty Lentil Tacos

You know, even with the good reviews, I was skeptical that I would like lentils as a beef substitute... I just polished off a plate of lentil nachos, and I don't feel NEARLY as guilty as when they were swimming in orange grease from ground beef!!! They were satisfying, and although I may not ever eat the lentils right out of the pan, with all the accoutrements, they were delicious. I used fresh garlic, and added some fresh cilantro at the end. I didn't have sour cream so I used a little bit of plain yogurt, a little shred chedd, squeeze of lime and some spicy salsa. PERFECT for a light dinner!!!!

Chicken Breasts Pierre

My boyfriend wolfed this down in no time. I made a few adjustments... used crushed tomatoes, used 1/2 red wine, 1/2 water as suggested. I used white wine vinegar (that's what I had on hand), added sliced yellow pepper, 1/2 a jalapeno minced, a little minced savory, and some chopped dried red peppers that I had on hand. TASTY!

Lemon Chicken Soup I

I am not normally a fan of soup, but my boyfriend has been feeling under the weather. I combined this broth with a more traditional chicken soup recipe (turnips, carrots, celery, onion, chicken, rosemary, garlic) and it was fantastic!

Nicole's Tailgate Party Chicken Salad

I tweaked it a little to use what I had on hand... I shredded up one of those roasted chickens at the grocery store, used 1/2 mayo and 1/2 miracle whip. I crushed up the croutons, and used almonds, cheese, and little champagne grapes in it ( I needed to use them!) My boyfriend and I ate it as a spread on sliced rosemary potato bread from albertsons as a picnic with a bottle of wine and it was PERFECT. Thank you for a perfect picnic dinner!

Stuffed Peppers

These stuffed peppers tasted like stuffed peppers, so it was a successful recipe in that way. I blanched the peppers, and it kept them from being bitter. I liked the filling quite a bit, but did not eat much of the pepper... a filling meal, and one I would make once in a while. If you like stuffed peppers, you'll probably like this recipe.

Banana Banana Bread

my roomates all love this bananna bread recipe! I think the outside gets a LITTLE too crunchy (my only reason for four stars instead of five). The density and taste can't be beat, I really like how easy this is to do. Thanks

Ojai Roast Turkey with Rosemary, Lemon, and Garlic

I tried this recipe this thanksgiving, and it worked out allright. Fairly okay as turkey goes. The turkey had good flavor, not much drippings, but that may have been the bird. All in all a very successful first thanksgiving on my own!

Fruit Pizza I

I used this recipe for a get together, and everyone loved it. I put out a tray of sliced fruit so that they could "make their own fruit pizza". I didn't use the cream of tartar in the dough, but it still turned out great. I also used flavored cream cheese on top, instead of the plain.

Basic Fondue

While this tasted great (it was a hit at my party!), I found the texture too grainy. This was my first time making cheddar cheese fondue, so maybe it was my fault, but I liked it enough to try again sometime! This went great with rosemary potato bread, sourdough bread, and fresh veggies!!

Cinnamon Rolls I

I cook a lot, but I don't bake a lot, and these were easy! Not really really quick, but worth the time.(I made them while playing a game of scrabble! They have to be easy!) I used the oven at 350, and added more sugar and cinnamon to the middle...I love 'em gooey. I topped with a simple confectioners sugar icing with a drop of orange extract, and some cream cheese mixed in. Delicious, and everyone loved them! My boyfriend eats several of them for breakfast, and sneaks them throughout the day... you know it's a success then!
