I wish that I an expendable budget to cook with! Hopefully the guy I marry will be willing to overlook a teensy bit larger food budget than if we ate frozen dinners all of the time!
My favorite things to cook
I love inventing things. I love taking what I have on hand, getting a good idea, and throwing things in the pot....the only bad thing is that I rarely write it down so that I can repeat it.
My cooking triumphs
My stuffed crepes have wowed people, along with my meatloaf (surprisingly), enchiladas, and rosemary wine chicken.
My cooking tragedies
My first attempt at sugar cookies when I was 8... classic blunder. Used 3 cups salt instead of sugar. My sister was the unfortunate who discovered it.

Chicken Breasts Pierre
My boyfriend wolfed this down in no time. I made a few adjustments... used crushed tomatoes, used 1/2 red wine, 1/2 water as suggested. I used white wine vinegar (that's what I had on hand), added sliced yellow pepper, 1/2 a jalapeno minced, a little minced savory, and some chopped dried red peppers that I had on hand. TASTY!

Lemon Chicken Soup I
I am not normally a fan of soup, but my boyfriend has been feeling under the weather. I combined this broth with a more traditional chicken soup recipe (turnips, carrots, celery, onion, chicken, rosemary, garlic) and it was fantastic!

Nicole's Tailgate Party Chicken Salad
I tweaked it a little to use what I had on hand... I shredded up one of those roasted chickens at the grocery store, used 1/2 mayo and 1/2 miracle whip. I crushed up the croutons, and used almonds, cheese, and little champagne grapes in it ( I needed to use them!) My boyfriend and I ate it as a spread on sliced rosemary potato bread from albertsons as a picnic with a bottle of wine and it was PERFECT. Thank you for a perfect picnic dinner!
