Hamburger Vegetable Soup

I substituted spicy vegetable juice for water to give it more of a tomato flavor. I browned the beef with the onions and celery and seasoned the beef with Emerils essence and garlic before browning. The result was a delicious soup that my family loved. Served it with grilled cheese for a yummy winter supper.

Soft, Moist and Gooey Cinnamon Buns

Absolutely fantastic! My husband prefers the Clone of a Cinnabon recipe which is also wonderful, but I like this one a little better. The rolls were a little more tender and flavorful. You really can't go wrong with either recipe.

Honey-Lime Enchiladas

I made this using shredded pork instead of chicken(cooked a pork loin in the crockpot for about 5 hours, then shredded). I doubled the marinade recipe and left out the half and half. Served it topped with sour cream and fresh cilantro with mexican rice on the side. The meat alone was so delicious and my husband raved about it. Best of all, my 5 picky kids all loved it, which is a rare thing for any dish! This is a definite keeper for us!

Cheeseburger Soup I

Made this for dinner, served with crusty whole grain bread--seriously yummy! Kids loved it, even my very picky 8 year old. Used Velveeta instead of cheddar cause it melts better and my kids like it. Also added some minced garlic. Will definitely be making this again!

Country Apple Dumplings

Okay, I was VERY skeptical that this could possibly be good, but had to try it because of all the great reviews. It was incredibly easy to put together(took about 5 minutes) and it was absolutely delicious!! My family raved about how good it was! This will be a regular last minute dessert at our house from now on. I think I will sprinkle it with chopped pecans next time for a little crunch.

Easy Homestyle Green Beans

This is how I've made green beans for years; I learned it from my mother-in-law. They are delicious and always the first thing on the table to go. It is key with canned green beans to drain and rinse them well to get rid of that canned taste. I just add about a can of water to make up for the lost liquid.

Roast Chicken with Rosemary

I have to give this five stars because it provided the inspiration for one of the best meals I have ever made. I washed the chicken and dried it well(a necessity to get that wonderful crispy skin), salted and peppered the cavity and the chicken very liberally, stuffed the cavity with a lemon cut in half and a generous amount of garlic in addition to the onion and rosemary. I mixed some minced rosemary and garlic with softened butter and rubbed it underneath the chicken skin. I tossed some cut up red skin potatoes, baby carrots and quartered onions with olive oil, garlic and minced rosemary and put it all around the chicken. I cooked it at 400 for about an hour and 45 minutes(5 lb chicken) and it was sooooo delicious. Everyone in my family loved it and they are all begging me to make it again soon. The chicken was flavorful, juicy and delicious and the veggies were perfectly cooked and incredibly yummy as well. This is the perfect meal for a fall evening; I'll be making it often!

Bananas 'N' Cream Bundt Cake

I thought this was very similar to banana bread and added a cream cheese glaze(3 oz cream cheese, 3 T butter, 3 T milk, 1 tsp vanilla and 2 cups powdered sugar) to make it more dessert-like. My family absolutely loved it; it disappeared in one night. I liked it too, but it's really not sweet enough on without the glaze to be considered a cake. I'll definitely be making this again.

Great Pumpkin Dessert

I love this recipe! Making this is one of our fall traditions; it's so easy my 8 year old can whip it up while I make dinner. I use pecans instead of walnuts. Really delicious with a scoop of cinnamon or vanilla bean ice cream or even with whipped cream. It's making me crave it just writing this! Yum!

Streusel Topped Blueberry Muffins

Was looking for a recipe for blueberry almond muffins and when I couldn't find one, decided to adapt this one. It worked out great; just subbed almond extract for the vanilla and left the cinnamon out of the topping, adding sliced almonds instead. The muffins were delicious; the almond and lemon flavors really compliment each other, and the muffin itself was moist, just sweet enough and delicious!

Creamy Chicken and Wild Rice Soup

Made this on a cold rainy Saturday and it was delicious. I also added diced onions, carrot, celery, mushrooms and garlic. I used half and half instead of cream and added one chicken bouillon cube for each cup of water. I also doubled the recipe. Everyone loved it and the leftovers were yummy too. This is definitely a keeper; the best cream soup I've ever made and just as good (or better) than you'd get in a restaurant.

Mariu's Spaghetti with Meat Sauce

We vacationed in Italy this summer, and had meat sauce that was wonderful and very different from the typical American version; much more meaty with tomato used more as a seasoning. This recipe fulfilled my hopes of being much more like a true Italian meat sauce. It was outstanding and my family loved it! Even my 2 pickiest kiddos who have flatly refused to eat spaghetti in the past gobbled it up. I doubled the recipe, seasoned the meat with some Emeril's essence, added more garlic than called for. Also added a can of tomato sauce in place of one of the cans of beef broth(3 cans beef broth, 1 can tomato sauce). This is our new spaghetti recipe; we absolutely love it! If you like a meaty sauce, you should definitely try this one.

Maggie's Camper Specials

I made this recipe over the weekend and baked one batch; I was disappointed that they did seem to spread out quite a bit. I was expecting a much chunkier, thicker cookie. I stuck the rest of the cookie dough in the fridge cause I got busy with the kids and took it out to use the rest today. What a huge difference some fridge time made! This time the cookies came out thick, crunchy and delicious. Will definitely use this recipe again, but plan on refrigerating the dough before baking.

Chocolate Earthquake Cake II

This was very easy to make and absolutely delicious. I used a fudge cake mix cause that's what I had on hand. I ended up having to cook this about 15 minutes longer than the recipe stated; might try raising the temperature to 350 next time.

Orange Cake

My 12 year old daughter made this for our family. It was super easy to make and moist with a very fruity flavor. She commented however (and I agree) that you could definitely tell it was made from a mix; sort of had that artificial flavor taste. The glaze was yummy though; maybe we'll try it again with the vanilla pudding.

Tater Tot Bake

I too placed the tater tots on top so they'd be nice and crispy. I also used cream of chicken soup and added about 1/2 cup of sour cream to the soup mixture. I also added some garlic and worcestershire sauce to the beef to give it more flavor. We ate it with ketchup; my kids said it tasted like cheeseburger and fries casserole. Not gourmet, but a good weeknight family supper when served with a green salad.
