Classic Cuban-Style Picadillo

I have made picadillo multiple times and this is by far the best recipe I have found. Only changes I made were to pulse the onion, garlic and green pepper in the food processor instead of chopping, omitted the cumin and added extra olives and capers and 2 bay leaves. So quick and so good. I have even made it with ground venison and it was excellent. I will use this recipe from now on.

Chicken Creole with Chile Cream Sauce

Tried this on a whim because I had everything on hand and wanted something quick - I'm so glad I did. It was so good. This will definitely be made often at my house! Only thing I did different was to use lemon instead of lime.

Christmas Breakfast Sausage Casserole

Slow Cooker Beef Stew I

I'm a little confused about how to rate this recipe. It wasn't quite as good as my normal stove top recipe, HOWEVER, it took me a total of 11 minutes to put together. So if I could give it a 4.5, I would. Followed the recipe except I left out the celery because we don't like cooked celery. Will definitely make again.

Authentic Mexican Breakfast Tacos

I have no idea if these are "authentic" or not. However, I do know that they are OUTSTANDING. Followed the recipe except for the milk. Garnished with avocado and PW Restaurant Style Salsa. Will definitely make these again and often.

Creamy Chicken

I made a few changes to this recipe. I cooked it on the stove top, I added about 1/2 cup of milk, mushrooms and used McCormick's garlic pepper seasoning instead of garlic powder and pepper. Served over rice. Very, very good. True comfort food.

Bread and Celery Stuffing

For both Thanksgiving and Christmas, I am required to make my mother-in-laws recipe of sausage stuffing. However, my father prefers stuffing/dressing without meat. I have tried quite a few recipes and all have been average. I found this recipe, decided to try it because of all the good reviews. Only change was, our bakery sells French bread cut into cubes, and I used that instead of white bread. It was a huge hit. I will use this recipe from now on.

Salad Nicoise

My mother made this salad often when we were growing up and now it is a staple in my house. It is still my favorite salad. My 'meat and potatoes' husband loves this salad. The only difference is I use a red wine vinaigrette.

Smoked Fish Dip

I'm a native Floridian and my husband and I LOVE smoked fish dip. This was my first attempt at making it myself. A friend gave my husband a bunch of smoked mullet and this is what we did with it. This recipe is very close to what is served in the local restaurants. I added an extra tablespoon of mayo and sour cream and omitted the liquid smoke. Next time I might try adding a little red onion. Served with crackers, lemon wedges and hot sauce. YUMMY!

Fluffy Pancakes

Hands down best pancakes I have ever made or eaten. On our way home from church, my 7 year old said she wanted pancakes. I usually use Bisquik but I was out, so when we got home, I found this recipe and followed it exactly. Light, fluffy, perfect pancakes!! I won't ever use Bisquik for pancakes again!!

Hamburger Steak with Onions and Gravy

Made this dish on a whim and I am so glad I did. I omitted the sherry, added fresh sage to the meat mixture and doubled the broth. It was fantastic. Served with Roasted Garlic Mashed Potatoes. My husband and 7 year old were very happy.
