Smoked Fish Dip

I'm a native Floridian and my husband and I LOVE smoked fish dip. This was my first attempt at making it myself. A friend gave my husband a bunch of smoked mullet and this is what we did with it. This recipe is very close to what is served in the local restaurants. I added an extra tablespoon of mayo and sour cream and omitted the liquid smoke. Next time I might try adding a little red onion. Served with crackers, lemon wedges and hot sauce. YUMMY!

Omelet Biscuit Cups

If I could give these 10 stars I would. I'm so glad I made a double batch. The only change I made was to omit the mushrooms and add scallions. I cooked the egg mixture till just barely set but still very wet, as I didn't want them to over cook while baking. I might have added too much mixture to the cups, however, the outcome was big, huge beautiful muffins. Husband freaked over them. He is a charter captain and leaves very early in the morning so I froze the extra and he pops them in the microwave and eats them on his way to the boat ramp. Thanks Leila for the great recipe. This will be a staple in my kitchen!

Salad Nicoise

My mother made this salad often when we were growing up and now it is a staple in my house. It is still my favorite salad. My 'meat and potatoes' husband loves this salad. The only difference is I use a red wine vinaigrette.

Creamy Chicken

I made a few changes to this recipe. I cooked it on the stove top, I added about 1/2 cup of milk, mushrooms and used McCormick's garlic pepper seasoning instead of garlic powder and pepper. Served over rice. Very, very good. True comfort food.

Chicken Claridge Stew

I wasn't quite sure what to expect with this recipe so I followed the recipe exactly. It was fantastic until I added the tomatoes. Then it was horrible. I'm not sure if it was the strong taste of the tomatoes or there was just too much going on in one pot. Tossed out and ordered pizza. I'm might make this again but will not add tomatoes.

Baked Ham and Cheese Party Sandwiches

If I could give these babies a 10 I would. I made them for our annual superbowl party and they were a hit! Three people asked for the recipe. I followed other reviewers advice and used the smaller King Hawaiian Rolls and left them in a block while removing the top from the bottom. I added a little mayo, then the ham, then cheese. Put the top back on a cut each sandwich seperately and placed on cookie sheet about 1/2 inch apart. Baked for 10 minutes with foil on and 10 minutes uncovered. They were amazing! These will now be a staple at all of our parties!

Chicken Creole with Chile Cream Sauce

Tried this on a whim because I had everything on hand and wanted something quick - I'm so glad I did. It was so good. This will definitely be made often at my house! Only thing I did different was to use lemon instead of lime.

Twenty-Four Hour Salad

Turkey in a Smoker

This is the most amazing smoked turkey we have ever had!!! I followed the recipe exactly. Took another reviewers idea and reduced the sauce. OMG! If possible, this made it even better. This will now be a staple on our Thanksgiving table!

Cuban Ropa Vieja

This recipe was good but it was not Ropa Vieja, which is why I'm only giving it a three. I live in Tampa, FL where there are plenty of fantastic, authentic Cuban restaurants, and Ropa Vieja is one of my favorites. This was WAY too heavy on the tomato flavor and there was something else missing that I couldn't figure out. Having said that, I used the leftovers on toasted buns and melted some provolone. Those were fabulous. Update 2014: I tried this recipe again. Used half the tomato paste, double the garlic and I added one packet of Goya Sazon. Tremendous difference!! Will definitely make this again.

Christmas Breakfast Sausage Casserole

Zesty Breakfast Burritos

If I could give these a 4.5 I would. They were really good. Not as spicy as I would have liked so next time I will use the Hot Mexican Chili Powder. Had some leftover so I froze them and they heated up beautifully. I used the whole wheat tortillas which were good, but I still miss the fresh tortillas we had in New Mexico. That's probably the difference between 4 and 5 stars. Will definitely make these again soon!

Authentic Mexican Breakfast Tacos

I have no idea if these are "authentic" or not. However, I do know that they are OUTSTANDING. Followed the recipe except for the milk. Garnished with avocado and PW Restaurant Style Salsa. Will definitely make these again and often.
