Sausage Casserole

I made this exactly as written other that I used reduced fat pork sausage. Although it was a bit bland, I will definitely make again, but I will add scallions or green chilies.

Twenty-Four Hour Salad

Love, love, love this recipe. For my husband, I sometimes substitute Ranch dressing for the mayo/sugar dressing. Awesome recipe!

Cauliflower-Cheese Soup

I would give this a 4.5 if I could. It does not get any easier than this. I substituted diced tomatoes for stewed tomatoes because it is what I had on hand. The leftovers are even better! I will definitely make this again.

Breakfast Pizza

I made this exactly as written except I pre-baked the crust for about 5 minutes. It was good but bland. It definitely need something else, scallions would have been a nice touch. Not sure if I will make again or not. Not withuot significant changes.

Chicken Breasts in Caper Cream Sauce

Followed recipe except substituted half and half for the whipping cream and doubled the sauce as everyone recommended. It wasn't bad but it wasn't great either.

Spanish-Style Chicken and Sausage

Let me start by saying this isn't my idea of Spanish Style Rice. Having said that, it was still a good dish. I omitted the green peppers, used brown rice and substituted a can of Rotel for the tomatoes.

Cuban Ropa Vieja

This recipe was good but it was not Ropa Vieja, which is why I'm only giving it a three. I live in Tampa, FL where there are plenty of fantastic, authentic Cuban restaurants, and Ropa Vieja is one of my favorites. This was WAY too heavy on the tomato flavor and there was something else missing that I couldn't figure out. Having said that, I used the leftovers on toasted buns and melted some provolone. Those were fabulous. Update 2014: I tried this recipe again. Used half the tomato paste, double the garlic and I added one packet of Goya Sazon. Tremendous difference!! Will definitely make this again.

Baked Spaghetti

Good comfort food. I omitted the season salt and added garlic, oregano, Italian seasoning and Italian sausage to the sauce. I also only used half the mozzarella and fat free cottage cheese. Served with garlic bread and a green salad. Will definitely make again.

Marinated Flank Steak

Green Chili Rice Casserole

Wanted a rice dish I could make with what I had on hand. Made exactly as written except added extra salt. Very good side dish, but next time I think I will only add one can of green chilies, just personal preference. My husband gave it three stars and then upped it to 4.5 after his third helping!

Fluffy Pancakes

Hands down best pancakes I have ever made or eaten. On our way home from church, my 7 year old said she wanted pancakes. I usually use Bisquik but I was out, so when we got home, I found this recipe and followed it exactly. Light, fluffy, perfect pancakes!! I won't ever use Bisquik for pancakes again!!

Salad Nicoise

My mother made this salad often when we were growing up and now it is a staple in my house. It is still my favorite salad. My 'meat and potatoes' husband loves this salad. The only difference is I use a red wine vinaigrette.

Supreme Scalloped Potatoes

Took some advice from previous reviewers and made the following changes: 5 lbs potatoes, 1.5 cups sour cream, cream of cheddar soup instead of cream of chicken and 1/4 cup melted butter. I used the food processor to slice the potatoes and onion and layered the potatoes, sauce and cheese three times. Baked it for 1 hour 15 minutes. It was very good and very easy, I received lots of compliments but I will only make this again on special occasions as I just can't justify the fat content. But I will be making it again.....

Omelet Biscuit Cups

If I could give these 10 stars I would. I'm so glad I made a double batch. The only change I made was to omit the mushrooms and add scallions. I cooked the egg mixture till just barely set but still very wet, as I didn't want them to over cook while baking. I might have added too much mixture to the cups, however, the outcome was big, huge beautiful muffins. Husband freaked over them. He is a charter captain and leaves very early in the morning so I froze the extra and he pops them in the microwave and eats them on his way to the boat ramp. Thanks Leila for the great recipe. This will be a staple in my kitchen!
