Candy Coated Pecans

Reviewed: Feb. 23, 2004
These were really yummy when eaten the same day as prepared. The pieces that survived the first day of gobbling turned a little tough and chewy the next day. Perhaps there was to much humidity in the air and they should be stored in an airtight container. I definitely will make this recipe for my family again.

Apple Cheddar Cheese Pie

Reviewed: Feb. 23, 2004
For those of us who like a slice of cheddar cheese with hot apple pie, this recipe is great. My crust didn't turn out as well as I'd like it, but I seem to be 'pie crust challenged' and have not yet worked out a technique for flaky, tender crust.

Almond Buttercrunch Candy I

Reviewed: Feb. 23, 2004
This was my family's favorite new Christmas candy this year. I would recommend using a candy thermometer, as the right heat is critical for cohesiveness to the other ingredient layers. Very simple prep. Family gobbled it up and wanted more!

Grandma Minnie's Old Fashioned Sugar Cookies

Reviewed: Feb. 23, 2004
I was looking for cookie recipes that would hold up well being sent to my son serving in the military overseas. He reported that the cookies traveled well and were yummy.

Caramel Flan

Reviewed: Feb. 23, 2004
After serving a spicy mexican-style dinner, this was the perfect, simple, creamy dessert. The only tough part is browning the sugar, but definitely worth the effort. My picky teenager requested the flan again right away.

Jollof Rice

Reviewed: Feb. 23, 2004
Our family really enjoyed this recipe. We're spicy food lovers, so I increased the cayenne and added a few more peppers. After preparing the meat, I finished cooking in the crockpot. Definitely will make again!

Red, White, and Blueberry Cheesecake Pie

Reviewed: Jul. 11, 2003
I needed a very special birthday cake for the 4th of July. Doubling the recipe and baking in a deep springform pan, I outlined a large star in blueberries, then stacked slices of strawberries in the center, topped with jelly. Baking time was increased to one hour, definitely put tinfoil cap around crust when baking that last hour. I think this recipe will become a July 4th tradition!
