Suzanne's Spinach Quiche

Tonight's dinner ... This is one of my favorite recipes and so EASY, I usually make two at a time. I've served it to company several times to rave reviews. I once had a vegetarian guest who loved so much she ate it for breakfast, lunch and dinner until it was all gone. If I owned a B&B this would definitely be on the menu!

Baked Pumpkin Bread

Delish and very moist, big hit over Christmas. Modified recipe as follows -- instead of 1 cup pumpkin puree I used the whole 15oz can; instead of 1/2 cup buttermilk I used 1/3 cup; instead of cinnamon and nutmeg I used 3 heaping 1/2 teaspoons full pumpkin pie spice. I mixed all wet ingredients together then folded in the sifted dry ingredients and I sprayed the baking dishes with nonstick spray. I baked two loaves together took full hour and then I turned off oven and left in for 30 mins. Let bread cool before removing from baking dish so it sets -- it is so moist and heavy if you don't cool it may fall apart.

made pies for Christmas, were delicious but used a topping from another recipe. I used granny smith apples ... next time I would decrease the sugar

Best of the Best Blueberry Muffins

giving 4 stars since I altered recipe -- cut sugar to 1 cup; cut butter in half; increased buttermilk to 1 cup; used 2 cups blueberries total and added 1 teaspoon vanilla ... yum. Be sure to fill muffin cups as much as possible.
