Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Made this as directed and the family loved it! I used boneless chops and served as suggested with asparagus and garlic mashed potatos, it was awesome! The balsamic and feta really compliment the pork.

Slow Cooker Chicken Tinga

This was awesome! My husband, who has been spoiled by California authentic mexican food, said it was restaurant worthy! I omitted the red pepper flakes and left in the adobe seeds and sauce and it was plenty spicy! In serving, I used flat corn tostada shells and layered the following: lettuce, chicken mixture, monterrey jack cheese, avacado slices, chopped tomato, cilantro cream (Which cut the spice - used allrecipes "Amy's cilantro cream sauce"), & few leaves of cilantro for garnish!!! This is now a favorite in our house! Great recipe, thanks for sharing!

Slow Cooker Chicken Tetrazzini

Great recipe! I used reviewer Alex's recommendation and the dish was excellent! I made a few modifications, I added a cup more broth and since I didn't have cream of chicken soup, I just added heavy cream (about 2 cups.. with 2 tsp of corn starch to thicken) and cooked for another 3 hours. I served it over plain white rice and with garlic toast as another reviewer recommended. My picky 16 year old cleaned his plate and my husband loved it. This will be a regular in our house now!

Dumplings

This is an excellent recipe. I used my own chicken soup recipe and just added these and as everyone said, they thickened the soup quite nicely. One word of caution for those newby cooks (like myself), if your soup is already simmering, after you drop the dumplings in, turn down your heat to low otherwise as soon as you put on the lid for the 15 minute time frame it will start to boil and your dumplings will be soggy (unless you like them like that). Happy cooking!

Turkey Shepherd's Pie

What a wonderful recipe and so adaptable. I think the broth and Worcestershire sauce should be a permanent addition to the recipe since so many recommend it. I did the same and it turned out great - it also masks the turkey flavor and makes it a darker color so it's better (both psychologically and for health reasons) for people who prefer beef. Also, I didn't have fresh veggies on hand so I used 1.5 12oz bags of frozen mixed veggies AFTER browning the meat (corn, green beans, peas @ carrots). My husband said he couldn't believe they were frozen veggies! Makes the recipe even easier!

Rosemary Ranch Chicken Kabobs

I cut chicken breasts into strips and marinated for 2 hours and these were AWESOME. Grill on High for 3 minute, turn and grill the other side 3 more minutes and then turn it down low for another 3 or until the internal temp reaches 180. This will be a regular in our house going forward. (Note - i took the suggestion of others and decreased the oil and made ranch from a packet to lower the fat using olive oil mayo and lower fat milk)

Enchiladas Suizas

Our family raves about this recipe. I couldn't find green chili's in a can so I used 1/2 lb of jalapenos and 1/2 lb serrano peppers (de-seeded)and used a food processor to dice them.* I also couldn't find shredded Monterey Jack cheese so I shredded a block myself and added a bit of flour to keep it from clumping when combining with the shredded cheddar. *If cutting fresh hot peppers chokes you and burns your hands (maybe it's just me!) use kitchen gloves and a dust mask when cutting/dicing and seeding (works like a charm).

Best Chocolate Chip Cookies

I used "Wordwench's" suggestion to change the white sugar and brown sugar amounts (white sugar to 1/2 cup and increase the brown sugar to 1 1/2) and these were THE BEST COOKIES we've ever had. Each batch made 2 gallon bags full of cookies and they were finished off in a week! They turned out very thin (pancakes!) because we didn't have the patience to chill the dough for 2 hours (or even an hour). If you don't like them that thin, add 1/2 C more of flour and they will be slightly thicker (but not cakey)and taste JUST as delicious!

Hash Brown Casserole II

If you like a more blended cheesy potato flavor over the potato chunks and cheese flavor, use shredded hashbrowns instead (same bag/amount size). Most of our guests prefer this smoother cheesier potato flavor and there is never any left over!

Potato Rosemary Rolls

I made this recipe for a recent group Christmas dinner and it was a complete hit. I took the advice given by simmering the rosemary and additionally used the water from the simmer as part of the recipe water. If your using a bread machine, the 12 servings recipe is a 2 lb loaf and I used white corn meal for dusting the pan. I'm making this again for Christmas day dinner!
