I really love this recipe. I made the following changes: added a WHOLE large can of pumpkin (3.5 cups) instead of the one cup it called for (This was a bit of an accident but it turned out great and I love us getting the extra veggie serving), subbed one cup of whole wheat flour for one cup of the white flour, split the sugar 50/50 with white and brown sugar, and reduced the sugar about 1/4 cup. To half of the batter I added some walnuts for crunch. I made the streusel but honestly found it just too much work. Next time I will just sprinkle the top with some granulated sugar before baking - much quicker and the same effect, I'm certain. This is a delicious, low-fat recipe I will definitely make again!
