Bran Flax Muffins
Terrific muffins and a great way to use oat bran and flax meal. I doubled the recipe for my family but didn't have enough carrots so I just added some unsweetened applesauce to round out the carrots and then of course the apples were in there. I also left out the raisins and nuts to keep the calories per muffin under control (next time I'll try Splenda!), also I think I could cut back on the sugar. The apples & applesauce make it sweet enough! I found that I had to cook these longer than expected - about 25 minutes and the ones in my silicone muffin pan didn't cook as well as the regular metal one. All in all this is a terrific muffin and we'll be making it regularly!

Pumpkin Apple Streusel Muffins
I really love this recipe. I made the following changes: added a WHOLE large can of pumpkin (3.5 cups) instead of the one cup it called for (This was a bit of an accident but it turned out great and I love us getting the extra veggie serving), subbed one cup of whole wheat flour for one cup of the white flour, split the sugar 50/50 with white and brown sugar, and reduced the sugar about 1/4 cup. To half of the batter I added some walnuts for crunch. I made the streusel but honestly found it just too much work. Next time I will just sprinkle the top with some granulated sugar before baking - much quicker and the same effect, I'm certain. This is a delicious, low-fat recipe I will definitely make again!

Kecia's Broccoli Salad
I just had this at a baby shower yesterday and it was wonderful. Even better, my two-year-old loved it and I loved that she was eating broccoli! I highly recommend this as a cold salad for picnics or just to keep in the fridge to serve with lunch.
