Surprise Muffins

Though not pretty (mine came out flat), they were one of the tastiest bran muffins I've had. My husband and kids gobbled them up. I decreased the baking temperature to 375 as others suggested, and mine were done in 20 minutes. The jam did sink almost to the bottom, but not enough to make the muffins stick. I may try leaving out the jam and mixing in raisins next time.

Grandma Ople's Apple Pie

The flavor was fabulous, like eating a caramel apple - in pie. The only negative was that the filling was pretty runny. I think next time I'll try tossing the apples with some flour before putting them in the crust to thicken it up.

Mellow Chocolate Chip Cookies

I would rate these 5 stars using some of the changes recommended. With a couple tablespoons more cocoa powder, baking at 350, and putting 3 marshmallows on top of each rather than mixing them in, they were delicious. They turned out fudgey in the middle, and the marshmallows were light brown. My husband declared them his new favorite!

Banana Bran Muffins

The texture of these muffins is perfect, very moist. They have a strong banana flavor too. I used half flax seed and half bran but otherwise followed the recipe. I think next time I'd cut down on the brown sugar, since they're a little sweet for me. This recipe is definitely a keeper!

Fragrant and Healthy Carrot Cake

I wanted something healthier for my daughter's first birthday cake, so I chose this recipe. I also made chocolate cupcakes, thinking some of the family might prefer them, but the carrot cake was the big hit. I'd definitely make this again. The orange flavor and the sweetness of the figs were really nice, a departure from the standard carrot cake.

Slow Cooker Beef Stew I

This recipe is exactly what you'd expect from a good beef stew - nothing out of the ordinary, but great flavor. We made 7 pots of it for a church supper, and I made it again at home, all to great reviews. I do love that you don't have to brown the beef.

Morning Glory Muffins

My husband and toddler love these muffins. I made a few changes to make them a little healthier, substituting 1c. of whole wheat flour for all-purpose, adding ~1/8c. each of wheat germ and milled flax, and reducing the sugar to 3/4c. I also left out the nuts for the little one. All in all, a yummy and healthy recipe. It's great for sneaking in more fruits and veggies.

Focaccia Bread

This bread is so good! I made the dough in the breadmaker, then patted it out onto a baking stone and let it rise a little before baking. I did find that after 15 minutes in the oven the bread was perfectly baked, but the cheese was really brown. However, I think it would be just as good without the cheese. I think next time I'll just rub it with olive oil and sprinkle with coarse salt.

Slow Cooker Lasagna

This lasagna is simple and very good. It doesn't really need the salt, so I left it out the second time. I also found that it only took 3-4 hours to cook in my slow cooker, so keep a close eye on it while cooking.

Melt-In-Your-Mouth Meat Loaf

This is a great meatloaf, so moist and delicious and very easy! There are only a few slow cooker recipes that my meat and potatoes husband really likes, and this one makes the list.

Banana Cream Pie V

This pie tasted great and everyone liked it. I think next time I would add more bananas to make it more banana-y. One word of advice: make sure to take the time to cook the pudding until it's VERY thick. A couple of times I almost took it off the heat before it was done, not realizing how long it would take or how thick it should be.

Green Beans for a Special Occasion

This is a great recipe, quick to make and very classy. I used frozen green beans and sauteed them with the garlic and pine nuts instead of boiling first. I thought they had a great, nutty flavor from the garlic, and my father-in-law kept raving about the pine nuts.
