Zucchini Wrapped in Tortillas

This is my favorite way to eat zucchini. I combine this with spiced black beans, a bit of cheese, and salsa on a tortilla, and warm it in the microwave. I thought there was too much cumin, and it was too spicy, so I used 1/2 tsp cumin seeds, 1/4 tsp ground ginger, 2 dashes of chili, 1/8 tsp balck pepper, and 6 whole cloves. It turned out great.

Roasted Sweet Potatoes & Onions

If you like candied yams, you'll love this. The amaretto and almonds create a more sophisticated candied flavor than the tranditional candied yams.

Cauliflower and Broccoli Bake

Very good. I prefer just broccoli, but including the cauliflower (1/2 head) was okay too. I used cornstarch instead of flour, 2% milk, 2/3 c. cheese, 1tsp paprika, 4 pinches of chili powder, and 1/4 tsp salt.

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

Edible, but not great. I prefer sweet potato pie and candied sweet potato. I think the main problem is too much cinnamon and not enough other spices. Adding asiago sounds like a good idea.

Roasted Root Vegetables With Apple Juice

This was fantastic. I did not include turnips and parsnips. As a consequence, I probably had about twice as much sauce relative to the amount of vegetables. I used 1Tbs butter and 2Tbs olive oil. After reducing the sauce volume, I added ~1/2 cup apple juice so there would be enough volume for all of the veggies to "boil" in the sauce. I cut the veggies to 1/4" thick slices, and covered the casserole dish with aluminum foil while cooking. I served this with a chicken dish, and drizzled a bit of the sauce from the chicken dish on the veggies before serving. Yum!

Roasted Beets 'n' Sweets

If you are a beet-lover, you will likely enjoy this recipe. I like beets in spinach salad with dressing and feta cheese, but the beet flavor was too strong in this dish-- it overpowered the garlic and sweet potato flavor.
