Cinco de Chili Chocolate Cupcakes with Chili Cream Cheese Frosting

This cake was delicious and moist and easy but I have one gripe. It was NOT spicy. There was a slight aftertaste of chili/cayenne but you kind of had to be looking for it to taste it. I had even added some extra cayenne but if I make this again I will double or triple the spice it calls for.

Spinach Feta Pizza

This review is for the Toppings only as I bought pizza dough from the deli :) Overall review- YUM! I used spinach, 1 roma tomato slices, a white onion, feta, mozzerella and a bunch of spices cause that's what we had at the house. Going in to the over, I was a little unsure but man, it was delicious when I came out all bubbly. I used the AllRecipes garlic butter recipe for the base/sauce subbing feta for parm. This pizza was great, I think I'll start experimenting with it!

Garlic Butter

This was really good. I used it as a base for a Spinach Feta Pizza so i left out the parmesan and used feta- probably didn't look as nice as with the parmesan but it worked great for it's purpose! I'd like to put this on the outside of a grilled cheese!

Thai Chicken Curry in Coconut Milk

Granted, I can be sold on anything with Curry and/or Coconut Milk this was seriously delicious. I didn't have red pepper so I used Yellow and Orange instead. I also added more curry paste than is called for and I threw in some spinach to add color. I topped it off with some cayenne pepper which I think is TOTALLY necessary. Super easy- It took me less than 30 minutes to put this together. I served with whole grain cous cous - YUM. The boyfriend loved it and I'll definitely be making this one again!

Lite Carrot Cake

I found the cake to be pretty bland. Perhaps adding some nutmeg or clove might have made the flavor better. I also thought it was a little dense - not quite as fluffy as it should have been. I did use all-purpose flour instead of cake flour howver and I'm sure this had something to do with it. It wasn't bad, I will just probably find a recipe that has a little more OOMPH in the flavor department next time!

Butternut Squash Bake

I really loved this recipe! It was easy, only a few ingredients -- and the blue cheese really worked well with the butternut squash! Don't skimp on the thyme. I used fresh thyme (as the recipe calls for) but probably put in 2-3 tablespoons and it wasn't overpowering. This will be a go-to winter dish for me!

Blue Cheese, Spinach Meat Loaf Muffins

This is a really interesting take on meat-loaf. It definitely has a very different flavor that traditional meat loaf. The blue cheese really makes it -- although I think any soft cheese (feta, gorgonzola, goat) would work too, but blue happens to be my favorite. I also like that you automatically have single serving portion sizes-- I'd like to try this with ground turkey next time.

Quinoa and Black Beans

This was my first attempt with quinoa and it turned out great! It was spicy without being overpowering. I made it as the main (and only) dish this time- which would be fine for me but next time I will make it as a side.
