Lemon Yogurt Muffins

These turned out great for me. Since many reviewers said they could be more lemon-y, I added a bit (maybe 1/2 tsp) of lemon extract. I also happened to have orange zest sitting around, so I used that instead of lemon zest, making them more of a general citrus muffin. I was careful not to overmix, since some reviewers complained of a rubbery texture, and mine turned out soft and moist. They were gobbed up by my friends and me. :) These are also easily made vegan by using Ener-G egg replacement, soy yogurt, and Earth Balance margarine.

Amazing Sun-Dried Tomato Cream Sauce

This is wonderful. I made it exactly as described, except I substituted the heavy cream with half and half. (I used oil-packed sun-dried tomatoes, rinsed well) Served with salad and bread, it's a super-easy meal fit for guests. Thanks!

This was very good. I think next time I'll add some yogurt in place of some of the milk. I think it will work well with strawberries and raspberries too.

Bread Machine Swedish Coffee Bread

Giving it a 5 because the recipe itself is perfect. I don't think I'm a huge cardamom fan, though, so the flavor isn't all that pleasing to me. The texture/bread is perfect though; I might replace some (or all) of the cardamom with cinnamon next time. (I also used brown sugar on top and it came out great.)

Unbelievably Easy and Delicious Vegetarian Chili

I might try this again. I thought the ranch flavor was a bit overpowering, so I'd cut it in half. Also, mine was way too salty, which was likely my fault because I used a fajita seasoning rather than low-sodium taco seasoning. Next time I think I'll make my own chili seasoning for it.

Excellent. I used 3-4 Tblsp butter, and probably ended up with more sugar on it. I might have had to cook mine a little longer than directed. If you're looking for pancakes this isn't for you; this is more like doughy scrambled eggs.

This was super-easy and quite good. I think it's meant for a deep 9-inch crust, though, because I made a mess. Next time I will probably halve the nutmeg and add more vanilla.

Crayfish or Shrimp Pasta

I made this exactly as the recipe called, except I switched half and half for the heavy cream. (both $$ and calorie reducer) It does take quite awhile for the sauce to reduce. It was pretty good for just me, but if having it for company I would use the heavy cream. (at least half of it) I gave it 4 rather than 5 stars because mine turned out quite salty. I really like salty foods, but this was a bit too much even for me. If I make this again in the future, I will use either salt-free cajun seasoning, or reduce the amount. I put shredded parmesan on top, and served with garlic texas toast. Quite good, but overall a bit rich for my tastes.

Classic Spanish Sangria

This is so, *so* good. As I was slicing the fruit I also decided it was probably too much, and ended up using only half of the lemon, lime and orange. I also added 2-3 sliced strawberries. I used Bacardi Limon, because that's what I had in the cabinet. (and a cheap Merlot) I think I used slightly less rum than the recipe called for; I didn't really measure it. For those who don't like to taste alcohol in their drinks, this will be too strong, but should be good if you cut it with some lemon-lime soda or ginger ale. (and if I make this for guests I will have some available for them, but I love this as is) I will definitely be making this again.

Margarita Chicken II

I wasn't too crazy about this. I love anything lime and margaritas too, so I expected to love it. I was at least willing to eat the leftovers, though. I added fresh cilantro and a little bit of taco sauce with my second meal, and I liked that better. I probably won't make it again, though.

Lime-Sauced Chicken

My chicken got sort of burned by just using cooking spray, so next time I'll definitely add some olive or vegetable oil to the pan. I loved the lime flavor, though, and this was so easy so I'll definitely try it again.

Asian Orange Chicken

I couldn't decide if I should give this 3 or 4 but decided on 4 because the flavor is quite good and I might try it again with some modifications. Mine turned out quite starchy and soggy too; next time I'll follow some of the suggestions of other reviewers. Overall pretty good, though, and does taste a lot like orange chicken at that mall restuarant.

Restaurant Style Egg Drop Soup

Even though I'll make a couple of changes next time, I'll give it 5 stars for how unbelievably fast and easy it is. As others has said, mine didn't really thicken up as I'd hoped, so next time I'll try to add the cornstarch mixture before the egg. I left the salt out this time because the broth was salty enough, but I think next time I'll put the salt in the egg as another reviewer said. Also, I ended up adding some garlic and extra ginger, because it seemed to need a bit more flavor. But overall, fantastic.
