Pineapple Upside-Down Cake II

This was ok - but I found the cake a bit a bit dry. Maybe it would have been better sitting a day. I can't imagine reducing the butter as other reviewers indicated.

Ricotta Gnocchi

This was a very easy recipe. I am a convert from potatoe gnocchi as this is so much easier to make. The sauce was fine too, but really you can pair it with whatever you have on hand. My only negative comment is the fact that this is NOT 5 servings. This fed my husband and myself with soma sausage on the side. I guess if it was for a very small side dish. If you want to feed a family of 5 you need to double or triple this recipe.

Mall Pretzels

This was a good recipe - but I did add an egg wash before baking. I have been wanting to make pretzels for a while - I have now decided however it is too much work for something that gets gobbled up right away. I guess that isn't a bad thing.

Pork Chop and Potato Casserole

I think the basic of this recipe was ok - but it definitely needed more flavour. I salt and peppered meat and the potatoes. I also added some old bay and fresh rosmary to the potatoes. Overall my family liked the it, but I was unhappy with the consistency of the sauce. Definitely should have added a few tablespoons of flour to the soup/ milk to make it thicker. It is a nice base to build from.

Savory Cheddar Zucchini Muffins

This is a really nice and fluffy muffin. I didn't give it 5 stars because I do agree that it was a bit bland. I added some extra salt, Old Bay and some Herbs de Provence. I also always substitute apple sauce for butter/oil in my baking. I used all apple sauce instead of butter with aTbsp of olive oil and it tasted fine.

Mom's Best Macaroni Salad

This was ok, but not my favourite. I found there was not enough acid / tang to counteract the sweet. I completely cut out the sugar and also added a bit of pickle juice to see if that would help. Maybe I will try again with less condenced milk.

Peppery Shrimp and Rice

This was a really easy recipe and very tasty. The only change I made was to put the shrimp in the sauce raw to cook as well as I used a mix of pernod and broth because I was out of sherry. It gave it a nice flavour. I did think it needed some extra salt as well.

Cucumber Dip

Yum. This is a really simple and flavourful dip. I wanted something for veggies and chips at the same time - but is kid friendly as well. I had to make my own Beau Monde seasoning (added nutmeg, white pepper, celery salt and seed, cinnamon, cloves, all spice and cloves). Thanks for the recipe!

Raisin Banana Bread

This was great banana bread - I made mini-muffins and a loaf, both were very moist. They only change I made was reducing the sugar by 1/2 a cup. I think next time I might go down to 1 cup as it was pretty sweet.

Fresh Guacamole

Wow! This is the best guacamole I have ever made. I think the addition of worcestershire makes the difference. I didn't use the serrano chille as my kids were going to be eating it but it was still fabulous. When you get multiple requests for the recipe after serving it you know you have a keeper.

Baked Chicken

This is the best breaded chicken recipe I haved made. So tender and tasty. I have also made it with non-fat yogurt with some extra salt and it was just as good. I generally add a few extra herbs in the breading - but the basic recipe is still amazing.

Hot Bacon Cheese Spread

I found this really tasty - but I was disappointed in the texture. It didn't seem to stick together and was quite oily. Maybe some flour would have helped.

Nutty Chicken Fingers

Yum. The peacans added such a great taste. I changed the recipe slightly - by adding some bread crumbs and ground flax to the mixture as well to increase the breading quantity. I also soaked my chicken in the milk with a bit of garlic for a few hours. I baked up some for dinner as well as froze the fingers for later on (always great when you need something fast to cook).

Chocolate Cavity Maker Cake

I LOVE THIS CAKE! While I usually like to cook from scratch, when you need something really quick, this chocolate cake is the answer. It is so easy and so moist. I have made it in a spring form pan and square pan as well. The square pan was great for our camping trip - the cake is so solid it is easily cut into squares for individual treats.

Jamie's Cranberry Spinach Salad

This salad turns out great, with very little effort. I have made it a few times and everyone loves it. Although, I think a all salads need cheese. I usually sprinkle some goat cheese in, along with adding chopped red onions.
