Chef John's Italian Meatballs

Best meatballs I have ever made. Used beef broth in place of milk, but other than that followed recipe exactly. Next time I will use less red pepper cause my kids are picky about anything spicy and more salt. I don't like things very salty so my husband was shocked when I said they needed more salt.

Juicy Thanksgiving Turkey

I have made this at least 3 times and it always gets rave reviews! Never add the lemon pepper becasue I just never use and don't want to buy it for one dinner a year. Makes excellent gravey and there is plenty of drippings to make it with. Just be very careful when removing the foil! It will let a lot of steam out and I have gotten a pretty good burn on my hands from it once or twice.

Freezer Peach Pie Filling

Excellent. But I made the first one with 2.5 cups of peaches and it was not enough filling. Made a second with about 4 cups and that seemed much better. I was using a regular glass pyrex pie pan and not a deep dish one.

Simply Pumpkin Pancakes

These were easy and awesome! I added 1/2 teaspoon of salt, 1/4 teaspoon allspice and a splash of vinegar. I made them again the next day and cut the sugar in half and they were still just as good!! My husband and teenager loved them. I really like them with real maple syrup but they like the fake stuff better.

Peach Cobbler III

This is one of the few peach cobblers that I have tried and liked. And I didn't just like it, I loved it! I made it as is plus added about a teaspoon of vanilla. Used canned peaches and used the juice instead of water. Next time I will cut it back to 1 cup like people recommended.

Spaghetti Squash I

This was awesome! I love Sp squash but never really new what to put on it besides just tomato sauce (which isn't my favorite). I used grape tomatoes because those were the ones that looked best in January. Added a little salt at the end and about 1/4 teasp oregano in the onions

Cream Wafers

This is my families favorite christmas cookie!! My Grandma has been making them for years in green and red always at Christmas. She always called them Parfish Wafers, cause that was the name they had in a magazine when ever she found the recipe, but we could never find anything else by that name. I leave out the egg yolk these days, and add a little splash of water to the filling to help it spread better (which will break less cookies!) My mother claims they take to much time, but I like to bake and think they are actually easier than cut out Christmas cookies with frosting. And they freeze really well!!

Easy Beer Bread Mix

Apple, Cranberry, and Pear Crisp

I really like the pears and apples together. I had three pears, one was really ripe and the others weren't as much. I think the under ripe pears turned out better, the ripe one was a little mushy. I added 1 tsp cinnamon to the fruit and only 1 tablespoon of honey. I think fruit is usually sweet enough and doesn't need added sugar. Next time i might just leave it out since the crust is sweet enough. I also would leave out the cranberries, they didn't really add much. And I only used 6 tablespoons butter which seemed like plenty! Next time might try with only 4!

New Year's Champagne Punch

Made it for a bridal shower and it was a big hit! Used mango sorbet instead of orange sherbert. Only made half and it still almost filled the punch bowl! There was more than enough for 15 people. Felt bad throwing out the left over but glad I didn't make the full recipie.

Round Steak and Gravy II

I'm not one to use condensed soup to cook with, but I had a round roast in the freezer and wanted something easy so I gave it a try. I sliced the round roast into thin pieces and made it in the crock pot with a dry onion soup mix, a can of cream of mushroom soup and a can of water. It was so easy and turned out really good! Made lots of gravy. You almost have to make mashed potatoes to go with!

Garlic Chicken Sausage and Summer Vegetable Saute

Really good! I used different sausage, coconut oil and added garlic, and didn't make polenta. Didn't serve it over anything, it was good enough as just sausage and veggies! Will start making without the sausage as a tasty veggie side dish too!

Spicy Orange Bison Balls

Three cups of water was way to much!!! Mine were still swimming after an hour of a hard simmer. And I watched the video and there was no way he added that much water. The flavor was really good, but to rate the recipe as written I would only give it 3 stars. Next time I would use no more than 1 cup of water and maybe a little less chile sauce, but that's just cause I'm a baby when it comes to spicy food. Will make again!

Spicy Garlic Lime Chicken

Had high hopes but just didn't like it much. I did use the garlic powder on the rub and real garlic in the sauce. I let the rub sit on a few hours in the fridge. But I think it was just an combo of spiced that I didn't think worked with chicken. And it just seemed to be missing something. I think it might work better on red meat or pork.

Spinach Tortellini Soup

This was really good! But helpful hint, only cook the amount of tortellini you are going to eat right away. I put leftovers in the fridge and the pasta soaked up all the liquid and got really mushy. Next time I will just cook one serving of pasta, and then put the broth on the fridge and just cook the next serving in it when I heat it up again.

Chicken Breasts with Olives

This was pretty good. I used chicken thighs cause they are cheaper and I like them better. I ended up with a good amount of 'sauce' and served it over rice. Next time I think I would brown the chicken in olive oil and then add everything else. I used cheap green olives cause that was what was in the fridge and also added artichoke hearts. They weren't bad but I might just make this without the olives or artichokes as the chicken was really good and lemony!!
