Kickin' Meatballs

Nice base for meatballs. A bit too bland for my family, though. The second time around I added a few shakes of tobasco and 1/3 cup A-1 steak sauce and that amped it up just enough for some awesome meatball subs!

Cooking Light magazine's Caesar Salad

The dressing was superb according to me and my 8 year old (who isn't a salad eater but had 3rds on this!) but my 5 year old (who eats salad quite often) and my husband hated it. It's a very strong vinegar taste so adjust it according to your taste.

Original Chex® Party Mix

Classic recipe which is not always on the box. Thanks for putting it here! To keep this gluten-free we just use the corn and rice chex and peanuts. We do 12 c. of the cereal and 2 c. peanuts. I love Worcestershire sauce so I double that and bake at 250 for an hour and 15 minutes. My youngest daughter and I made this an hour ago and can't wait for it to come out of the oven!

Monterey Spaghetti

I guess you could substitute fat-free sour cream and low fat cheeses; the description says "healty and wholesome", but this recipe is 70% fat!!!! That is NOT healthy in my opinion. Too bland, not worth it

Slow-Cooker Barbecue-Beef Sandwiches

How easy was this to make! SUPER EASY! The meat tore apart so easily and we had enough of it left over for 3 lunches. Really tasty and great for a cold winter day, a potluck, or any time! A real 'hungry man' pleaser!

Pasta with Three-Herb Pesto

The pesto was simple to make but because it does use fresh herbs, it is very strong and pungunt. Very 'healthy' tasting which can be good and bad. My husband and oldest don't like that taste (and I only used 1/3 of the amount!) but my youngest and I don't mind it. I won't be making this again because of that.

Simple Caesar Salad Dressing

I didn't add as much lemon juice, omitted the vinegar completely, and added about 1/3 cup of fat free ranch dressing to make this recipe more kid friendly. I served it as the dressing for my grilled chicken caesar salad which was the main dish and my non-veggie eating husband went back for 3rds!

Momma OB's Chicken Chili

Two stars because I'm a chili fanatic and this was just REALLY bland. My kids thought I was giving them pasta sauce with chicken because of it's consistancy. It was quick and easy and a great way to use leftover chicken, but we won't be using it as a chili again...maybe as a pasta sauce, though!

Southwestern Meat Loaf and Baked Potatoes

The cilantro could be omitted, as it's very strong, and I added extra potatoes to make this low-fat but more filling. The loaf holds it's shape, much to my surprise, and even the picky eaters ate this up so fast that we didn't have leftovers!

This was really easy to make and I made it because it's low-fat and low-cholesterol, but compared to my authentic 'secret recipe' high-fat high-cholesterol lasagna, the entire family was really disappointed. It was just really bland.

Cooking Light magazine's Indian Chicken Curry

This was excellent, easy to make, and made enough to fill my husband up and have plenty of leftovers. My picky kids ate it up and had seconds! Indian food isn't spicy unless you want it to be so don't shy away from this just because it's Indian. Great way to introduce new culture's foods!
