Scalloped Cabbage with Ham and Cheese

Really good. Used low-fat shredded cheddar. My husband and kids weren't expecting much, but were pleasantly surprised. This would probably would be good with hamburger and/or ground pork, too. Thanks!

I made these into muffins. I used splenda instead of sugar, applesauce instead of oil, and half of the flour was whole wheat. Still very good and moist!

Pineapple Upside-Down Cake VII

Definitely the BEST! I made it for someone's birthday because Pineapple UDC is their fave. I was a bit skeptical that it would come out well, since the ones I have made in the past were dry. Well, about 7 people ate it, and every single one of them RAVED about it. Even someone who didn't usually like this kind of cake loved this! Someone said he has been to many many restaurants all over the country, and this was the best he'd ever had. The birthday girl was still thanking me the next day. THANK YOU for making my cake the party hit!

Quick Vanilla Frosting

No, this isn't a "traditional" frosting, and some people will be disappointed, but it depends on your taste. I've had frosting like this before,and it's a big hit in my family. It was great for the "Ariel (The mermaid)" b-day cake my daughter requested. I added blue food dye and the peaks in the frosting looked like waves. Thanks :)
