Cheesy Spinach Lasagna

Reviewed: Jun. 12, 2003
Awesome! Substitued provolone for mozzarella and added a couple more slices of bacon. My Husband doesn't care for spinach, but he LOVED this recipe. He said it was the best lasagna I had ever made.

Shrimp Fettuccine Alfredo

Reviewed: May 15, 2007
Really good...but the sauce never got thick, even after I added cornstarch and more shredded parm than was called for. However, once I mixed it in with the pasta, it was fine. I also added mushrooms. Husband thought it was a great birthday supper!

World's Best Lasagna

Reviewed: May 17, 2007
Really good...I made for a group and everyone loved it. One thing I'm not sure I did right: I used ground sweet italian sausage, maybe I should have used links. I definitely would use cut up sausage next time, I think that would make it even better. And probably mushrooms too.

Pineapple Upside-Down Cake VII

Reviewed: Jul. 15, 2007
Definitely the BEST! I made it for someone's birthday because Pineapple UDC is their fave. I was a bit skeptical that it would come out well, since the ones I have made in the past were dry. Well, about 7 people ate it, and every single one of them RAVED about it. Even someone who didn't usually like this kind of cake loved this! Someone said he has been to many many restaurants all over the country, and this was the best he'd ever had. The birthday girl was still thanking me the next day. THANK YOU for making my cake the party hit!

Sauceless Garden Lasagna

Reviewed: Jul. 26, 2007
Pretty good. I added pesto sauce and spagetti sauce and left out the tomatoes, olive oil, and vinegar. I'm sorry but, vinegar in lasagna just seems wrong and I was afraid it would turn out awful. So I chickened out! Anyway, I wasn't real fond of the no-cook noodles, but my husband and kids ate this up; Hubby says probably the best I ever made. I think it was the pesto sauce and feta cheese that made this dish.

Zucchini Bread III

Reviewed: Aug. 16, 2007
Pretty good. I made one loaf as the recipe states, and one loaf substituting vegetable oil for canola oil, and brown sugar for splenda. The "diet" loaf was just as good as the "non diet"

Downeast Maine Pumpkin Bread

I made these into muffins. I used splenda instead of sugar, applesauce instead of oil, and half of the flour was whole wheat. Still very good and moist!

Quick Vanilla Frosting

Reviewed: Nov. 2, 2007
No, this isn't a "traditional" frosting, and some people will be disappointed, but it depends on your taste. I've had frosting like this before, and it's a big hit in my family. It was great for the "Ariel (The mermaid)" b-day cake my daughter requested. I added blue food dye and the peaks in the frosting looked like waves. Thanks :)

Peppermint Cereal Squares

Reviewed: Dec. 2, 2007
A good way to jazz up rice squares. Next time, I think I will press the squares in a small pan so they will be thicker. Also, I think I will add chocolate.

Layered Mint Chocolate Fudge

Reviewed: Dec. 23, 2007
Very good. But I felt the chocolate layers were too thin, so, I just made two layers; all the chocolate on the bottom and the mint on top.

Ham and Rice Bake

Reviewed: Dec. 30, 2007
It was good; I substitued green beans and added 1/4 cup french fried onion bits on top...I think I will add even more french onion bits next time and maybe cream of mushroom soup instead of chicken.

Lazy Man's Pierogi

You know, this is a lot better than I thought it would be. I got healthy with it and used turkey bacon, whole wheat pasta, and fat free soup. Still good, everyone liked it. More bacon next time (I should've listened to everyone else).
