Cut-Out Cookies Made with Oat Flour

Reviewed: Feb. 9, 2011
This is a great recipe, I just finished them up. Word of warning, these do NOT make 60 cookies, unless they are paper thin or super tiny. I was using them to give to kids for Valentines and they would be wrapped individually so I didn't want them to fall apart. They made 30.

Stuffed Peppers

Reviewed: Jun. 28, 2011
This was excellent! I used quinoa for the rice and chicken sausage for the beef, I also used red bell pepper instead of green and I covered with foil. This had great flavor, at least with the sausage!! This will be on regular rotation at our house!

Italian Spaghetti Sauce with Meatballs

Reviewed: Dec. 7, 2010
OK, I haven't actually eaten it yet, but the meatballs are totally falling apart in the sauce! Any suggestions? I used oats instead of breadcrumbs.

Slider-Style Mini Burgers

Reviewed: Nov. 14, 2010
I love this recipe, I have used it several times, I knew there must be a trick to keeping them soft, next time I will use just foil! This is a great recipe for a casual crowd, I used it tonight for my sons birthday. I will definitely be using it over and over! It's great with ground chicken too.

Stuffed Pork Chops III

Reviewed: Nov. 10, 2010
I made this recipe as it. I used at least in and a half cut chops and they stuffed beautifully. You could easily pound out chicken or thinner cutlets, stuff, roll and toothpick. I used old fashioned oats and made them course in the food processor, I do this with all recipes that call for bread crumbs as I have an intolerance to white or wheat flour. So yummy!!! You could easily add to the stuffing (cranberries, pecans etc.) This will be on my rotation of monthly meals, truly decadent for everyday!!! Thanks Karen

Tuscan Soup

Reviewed: Sep. 16, 2009
This is a great simple soup. I Just finished it and am taking it to a friends for lunch. I am sure all the other variations were helpful according to preference, but I am giving it 5 starts AS IS. I was too lazy to do the onion and used onion powder and it was still great. I used spiced Italian sausage, and I did as recommended, drained and rinsed sausage. I bet it is even better after sitting a day!

Honey Baked Chicken II

Reviewed: Aug. 10, 2009
It was easy and everyone asked for the recipe. It was a little something "extra" (curry) that just made this a treat for a potluck. I will definitely put this in my recipe box to make again and again. Thanks for sharing!

Tangy Apple Chicken Loaf

Reviewed: Oct. 6, 2010
This was fantastic, as far as prep there are many short cuts and believe me I took them! This was moist and wonderful. This is an AS IS review. The only substitution I made was oats for breadcrumbs. The whole family gobbled it up. We had the babysitter over for dinner that night and she had never had meatloaf and loved it! Thanks for a very healthy, terrific recipe. It will be on my meal rotation often, especially now that Gala apples are in season! Shortcuts I took were using a food processor and bought an onion celery blend in freezer section.

Sopapilla Cheesecake Dessert

Reviewed: Apr. 20, 2009
This was a hit at a ladies bible study. This dessert is done 1000 times here in Texas, but usually more gooey and without the almonds. So it was received like a new dessert, crisper top and more sophisticated. Thanks!!!

Michael's Foccacia Bread

Reviewed: Jul. 1, 2008
This was a fast and easy bread to do. I used a bit too much salt on the top, but that was a matter of preference. The bread itself was very good. This will be a staple for homemade bread. Lots of ways to add to it too. Thanks for another great recipe from this site!!

Sun-Brewed Mint Tea

I used a mild basil variety and orange mint mixture. BTW, a "BUNCH" is equal to a cup and a half. I looked it up once when using cilantro, and was glad I did!

Baked Slow Cooker Chicken

Reviewed: Oct. 19, 2010
I did this recipe AS IS, foil and all, except I omit the 1 our on high, I believe this method is to make skin crisper and if you can add the step, I imagine it will be worthwhile. I put it in frozen the night before because we do this for Sunday lunch after church and by 1pm it is ready. This method, while palatable, is not as good as putting it in thawed. It is fall off the bone for sure. The only reason I did not give it 5, is because the meat itself does not absorb any "spice". So the meat tastes like great tender chicken, but my husband is always a stickler for "spice". Regardless, we use this method every Sunday and I will be experimenting and researching how to infuse the meat with this method. The paprika is a great accompaniment, and my husband preferred it to putting just garlic and onion in the cooker for flavor.

Pizza Pinwheels

Reviewed: Feb. 7, 2011
I made these tonight and was so glad for the recommendation to freeze before cutting, it was great! I used sauce that already had meat in it and mushrooms, just pureed it so the kids would eat it. I don't recommend this it was messy. I think next time, and there will be a next time, I will do ham and mozzarella, and maybe pineapple!

Easy Chocolate Banana Cake

Reviewed: Feb. 18, 2011
I am definitely using this for my daughters "Monkey" birthday. I used the devils food chocolate cake mix and 3 bananas. One in that much chocolate would have been lost. If you are not tasting banana at all, your bananas are too ripe. The blacker the better in baking. I keep my rotted bananas in the freezer for just such an occasion!
