About this Cook
I'm a purest when it comes to cooking. I come from northern Ohio where Maple syrup is produced so the thick gooey syrup stuff wall street tries to market as syrup doesn't fly with me. I also love "TRUE" Belgian waffles. I also love to bake cakes. I love them so much I started creating and selling them ( I created a Key Lime cake with a Key Lime Butter glaze that is so good it's probably illegal in some states!
My favorite things to cook
I love to bake cakes. I love to "create" new ideas for cakes. I love the "science" of baking. I guess that's why I love the show "Good Eats" with Alton Brown. My website ( has the BEST Key Lime cake EVER. It took me 16 months to develop the recipe. I also just created a Chocolate Raspberry Supreme cake that is to LIVE for!
My cooking triumphs
Creating one of the first Key Lime cakes (March of 2007). It took me 16 months to perfect it and now I am seeing Key Lime cakes popping up everywhere.
My cooking tragedies
Never ice a Carrot Cake with Cream Cheese frosting before the cake has properly cooled...especially if it's three layers sitting on the top shelf inside a refrigerator!

Key Lime Daiquiri Pound Cake
Having created my own Key Lime Cake ( I wanted to see how it fared with others. This is a very good pound cake recipe. I would give it 4 stars as it was somewhat on the dryer side than I like. But as for it being a "Key Lime" cake, it gets 2 stars. The flavor is not substantial enough to be called a Key Lime cake. It was dense but not moist enough for me. Sometimes using shortening will cause this compared to oil or applesauce. The glaze also did not work well for me. It was too tart and not sweet enough. Those that found this to be a good "Key Lime" cake must not have tasted the cake without the glaze. A good cake should be able to stand on its own flavor and the icing or glaze should only be (if you'll pardon the pun) 'the icing on the cake'. Bill "The BabyCakes by Orangeman" guy!

Banana Pancakes I
Very flavorful and easy to prepare. I was surprised how much banana flavor there was in these. My only concern was the consistency. I like my pancakes to be a bit fuller. I shall add a bit more flour each time until I come up with the what I desire. Otherwise, I was as happy as a...well a monkey in a room full of bananas!

Buttermilk Syrup
5 stars for ease of making. 3 stars for consistency. I like my syrup to be like "REAL" maple syrup (Grade A is thin & like water) and this was more like a sauce so I added 1/2 cup more buttermilk. I give it 6 stars for its rich, caramel-like flavor. If you don't like real sweet, you won't like this. Although a maple syrup "lover" and purest, I now prefer this. Absolutely delicious!
