Excellent...excellent...excellent!! Such a wonderful balance of flavors. I didn't add the egg but for an added kick I added horseradish. Yummy!! This one's a keeper!!

Avocado and Black Eyed Pea Salsa

Reviewed: Feb. 13, 2014
I've made similar salsas but this was my first time using black eyed peas. I amped up the spice with a chopped Serrano pepper. This is a winner!

Margaret's Keftedes (Greek Meatballs)

Reviewed: Jul. 13, 2014
These were delish! They were moist & very flavorful. I served them in pitas with tzatziki and a Greek salad of red leaf lettuce, tomatoes, feta, kalamata olives, capers & vinaigrette.

Love this egg salad recipe. I omitted the bacon & added chopped pickled jalapeño because we love the heat. Will definitely make again. Thnx for sharing.

Quick and Easy Hollandaise Sauce in the Microwave

Reviewed: Mar. 19, 2015
Thank you for sharing this recipe, scottki. It was quick AND delicious. I added juice of half a lemon and followed another reviewer's suggestion and microwaved in 10 second increments. I also added a few drops of hot water in the end to thin out a bit. Will definitely be making again. Whew! And I didn't have to wash the blender! Yeah! :)

Cinnamon Crunch Bars

Reviewed: Aug. 29, 2014
OMG! These are so easy and so delish. I'm afraid my husband is going to OD. Took the advice of others and baked @ 375 degrees for 9 min. Allergic to walnuts so I used chopped pecan, added coconut, then sprinkled the cooled cookies with a little fleur de sel. A trifecta: sweet, salty & crunchy! Yum! Yum!! & Yum!!!

Cranberry Muffins

Reviewed: May 9, 2012
Love 'em!!! I made these as part of a breakfast I hosted for 15 business associates and they were a huge hit. One person asked where I bought them. I added orange zest & fresh orange juice to the batter as another reviewer recommended plus I added chopped pecans to the topping mixture. Definitely will make again. My husband tried to hurt himself on them. ;-)

Delish!! Made this for the 4th of July and it was a big hit. The chicken grilled up beautifully. Sides were grilled Caesar salad and grilled pineapple slices.

Spice Bars

Reviewed: Feb. 13, 2014
These spice bars were fantastic! I used another reviewer's recommendation and added an egg to the batter. Since my oven tends to run a little hot I only baked the bars for 18 minutes & they turned out perfectly. I accidentally used 1/2 T cinnamon but it worked. Hubby loved them. Will definitely make these again!

Greek Chicken

Reviewed: Feb. 13, 2014
This is sooooo delicious! I was preparing a Greek inspired menu for some business associates & this filled the bill perfectly. Since I love spice, I added a couple of chopped Serrano peppers to the marinade for half the chicken & it great. All my guests loved it.

Brown Sugar Cookies

Reviewed: Aug. 10, 2014
Delish! I made these just as written and they are delicious. They absolutely remind you of Blondies. As suggested by another reviewer, I think I will reduce the brown sugar to 1 3/4 c. Thnx for sharing! ??

Grilled Pineapple

Reviewed: Jul. 10, 2012
I give this four stars based solely on the fact that you can't miss with grilled pineapple. Based on other reviews I really expected a more elevated flavor profile from the hot sauce and honey. In all honesty I did add a tablespoon of honey because what is the point of 1/4 tsp. of honey? Next time I'll just skip the additional preparation and just grill it. ;-)
