In 2004 Joe was tested for food allergies and the list of reactions was quite long. In general, cooking became a challenge and we read a lot of labels to figure out what would work. Confirmed allergies: • Dairy - cheese, butter, cream, milk • Molds – wine (fermented), vinegar (fermented), soy sauce (fermented), yeast, enriched anything (flour, rice, cereal), mushrooms, olives, raisins, malt, molasses, brown sugar, malted barley (malted anything), pepper (ground, white, black) • Eggs • Tomatoes • Peanuts and peanut oil (any peanut product) • Shellfish, also in any product with added calcium or calcium fortified products • Cottonseed oil
My favorite things to cook
As a general rule, the following items are safe foods: • Vegetables – fresh or frozen • Olive oil • Lemon juice • Salt, spices, garlic • Tree nuts, sunflower seeds • Non-marinated fish, beef, pork and chicken • Fruit
My favorite family cooking traditions
As you shop, look for the following allergen free products: • Non-Enriched Flour: Hodgson Mill white or most whole wheat. Most whole wheat flours are not enriched. • Rice: Brown rice, jasmine, or basmati is preferred. Plain cous cous or other grains • Poultry: Smart Chicken, Organic Chicken, or Amish Chicken is fine. Fresh organic turkey • Pork: Hormel “All Natural” • Red Meat: Free-range, minimally processed, organic • Chicken Broth: Organic Free-Range Chicken broth made by Imagine. • Salad Dressing: Annie’s Naturals – Lemon and Chive Dressing or Kraft Light Zesty Italian with Extra Virgin Olive Oil • Brown Sugar: C&H Brown sugar only • Pasta: 100% durum wheat semolina only. • Cereal: Post shredded wheat • Bread: French Meadow Bakery Men or Women’s • Crackers: Carr’s table wafers or Reduced-fat Triscuits. • Chips: Baked corn chips with corn, salt, and lime as only ingredients. No cottonseed oil. • Chocolate Chips: Guittard semi-sweet (gold package)
My cooking triumphs
Substitutions • Butter/Shortening: Use butter in small quantities. There is no margarine or Crisco that will work. Olive oil or canola oil is fine. • Cooking without Eggs: Use powdered sugar rather than white sugar when baking. Cornstarch and applesauce also make a good substitutes. You can buy an egg substitute at the co-op stores and it works pretty well. • Milk: Replace all regular milk with Classic Rice Dream in original or Vanilla. (Not enriched).
My cooking tragedies
• Meat cannot be processed or packaged in a solution. Fresh poultry is fine, but cannot have any broth or water. Grocery store beef may contain tenderizers with fermented ingredients added at the processing plant. This will not be apparent from the label. Jeannie O products all contain a yeast solution as do most Tyson chicken products. Frozen bags of chicken are really bad.

Brennan's Irish Soda Bread
Excellent option for a yeast-free bread. Made no modifications. Reduced baking time to 40 min - and changed from top to bottom shelf half-way through for a more even crust.

Pumpkin Tart With Pecan Crust
We have experimented with egg-free pumpkin pie recipes for years -- this is the best one yet! Substituted rice milk for soy, changed the spices to match the recipe from the festal pumpkin pie can that we used to make. Thought it could be a little sweeter, so may add 1/4 c. brown sugar to the filling next time. Served it to a non-vegan family and it was well received!

Creamy Corn Chowder
We loved this chowder! It's rich and creamy. Only blended half of the veggies and broth, for a more chunky soup. Used sweet corn cut off the cob and boiled it with the potatoes. Added 1 tbsp of cilantro to finished soup. Heavenly!
