Cheeseburger Soup I

As written, pretty bland especially with mild cheddar. Tried it again with some changes, of course, and much better. For speed followed other reviewers and used frozen onion and O'Brien potatoes plus medium cheddar and a squirt of chunky garlic paste. Still pretty blah, so added a good measure of Montreal Steak seasoning - that did the trick! Also did not heat with sour cream, instead served a dollop of that in the soup bowls.

Salad Stuffed Shells

Did not have all the listed ingredients - just made a big tossed chop salad with romaine lettuce, cukes, tomatoes, red onion, shredded carrot, a little shredded parmesan cheese toasted almonds and croutons. Tossed half with italian dressing and half with Catalina (red) dressing. Drizzled more dressing on top and sprinkled with more cheese. Took them to a pot luck - total hit. Next time I am in a hurry for a pot luck dish, I think I might just buy deli salad and stuff with that - tried a few at home with the broccoli salad - was tasty!

Artichoke and Spinach Stuffed Shells

This is a wonderful dish - even with substitutions. Great way to get family to have some veggies. I have made this several times, as written and with variations depending on what I have available. Not having the dip, I made some with artichoke hearts and frozen broccoli, cream cheese, and ricotta. Doubled the recipe and used jar Alfredo sauce on half and red sauce on the other half. Son-in law even got up to raid the refrigerator and finished off the few remaining shells.

Italian Breaded Pork Chops

Essentially made as written - had boneless chops so dropped oven temp to 300. Tried adding some Montreal steak seasoning to my breadcrumbs, made it a bit too salty. The breading cracker was wonderful. thanks!

Tater Tot Taco Casserole

A keeper. My adaptions-used regular frozen corn, 28 oz medium green sauce, and a small can of diced chilis, garlic/parsley mix, and a heaping big spoonful of bulk taco seasoning.

Southwestern Roasted Corn Salad

Wonderful taste - and wonderfully versatile. Added rinsed can of black beans, little bit of broccoli, little bit of carrot, and a little extra sugar as my juiced limes were a little overpowering.
