World's Best Lasagna

Crustless Spinach Quiche

I eliminated the oil and one cup of cheese from this recipe and added chopped ham and garnished the unbaked quiche with halved cherry tomatoes. Delicious!

Cornbread I

Just what I needed- a cornbread without flour. I baked this batter as muffins, since I needed to freeze them ahead of time. Also added 1 T. Xylitol sweetener and 1/2 tsp. baking powder. (No idea why on the last ingredient!)

Carolina Style Low Carb Barbecue Sauce

I'm from Missouri so this isn't what I think of when I think of BBQ sauce. That said, it was tangy and delicious and just what I needed on my low-carb diet.

Cayenne Pretzels

These are my number one weakness- if there's a bag of these laying around (getting spicier while they sit, as one reviewer rightly stated), I can't rest 'til I have some. And they're best made with pretzel sticks, definitely!

Roasted Mushroom Soup

The rosemary and garlic roasted mushrooms gave aromatic flavor, the thyme simmered with the onions and garlic, and it all blended amazingly into a fragrant, creamy soup. I cut the oil and butter amounts in half, for less fat, and also had to use rice milk for both the cream and milk, due to lactose intolerance. I added a couple of T. of coffee creamer to add richness. Would probably have to give it six stars with real cream.

Quinoa Side Dish

First time trying quinoa and I'm in love. I cut the oil in half and sautéed the onion with the quinoa, like someone suggested, then added the garlic with the broth. Making this again...

Low-Fat Blueberry Bran Muffins

If you're used to light, fluffy, sweet muffins, don't try this recipe. If you want a grainy, healthy, low-cal, surprisingly tasty muffin that you can feel good about, do try it. I added 1 tsp. of nutmeg. I also followed someone's suggestion and used only whole wheat flour, 1/3 cup honey, and no brown sugar. (Might add some Xylitol as well, next time.)

Mexican Whole Wheat Flour Tortillas

In a country without tortillas, this is a lifesaver. I followed another reviewers advice and used olive oil and half the salt. I let the dough rest an hour and a half and used my heated press, and they turned out super. Guilt-free wraps and burritos!

No-Fuss Chicken

When I said this would become a Sunday staple, my husband cheered. I used a mixture of boneless chicken thighs and breasts and whole wheat flour. It was perfectly done in just under three hours. (My slow cooker runs cool.) To those thinking the recipe was too much prep work- there are days when I wouldn't have time to fix this before tearing out the door, but other times it fits the bill just right. Try it!

Pork Chalupas

I doubled the beans in this recipe and I could've tripled them. I can't buy canned green chilies here and didn't have any frozen on hand, so I used canned red chilies. Delicious and so easy! My guests all took seconds.

Veronica's Apple Pancakes

I went heavy on the apple, light on the butter, and used mostly whole wheat flour. I also used mostly no-fat yogurt for the milk (I needed to use it up) and therefore had to add extra milk, as the batter was too thick. Delicious! I will make these again.
