I'm a wife and mother to my precious 6 year-old daughter, Olivia. As she gets older, I hope she'll appreciate the art of cooking and will also love to cook with me. I love cooking and am always experimenting with new recipes or adding my own flair to existing recipes.
My favorite things to cook
I really like to cook dishes which I just make up on the spot with common ingredients. I usually take a recipe as a base from which to work, and then add my own special touches to the dish. I haven't had too many flops that way, and it keeps cooking interesting!
My favorite family cooking traditions
I love to help my mom with our traditional Christmas Eve Shrimp & Scallop Fettucine. It always turns out so well....sooo incredibly rich and yummy! I also love to help her prepare our Christmas Night traditional Prime Rib. The rub is the key to a perfectly crispy outside and tender, melt-in-your-mouth meat!

Creating new recipes from scratch and constantly searching for ways to improve upon a made-up dish or even an old standby.

Beth's Spicy Oatmeal Raisin Cookies
Very good! Used all butter and added a touch more vanilla, otherwise followed the recipe exactly. My only wish is that they would've been a tad spicier, only because I love a spicier cookie. That's an easy fix for next time though. Love the way the house smells too!

Peanut Butter Noodles
Decent, quick, easy, and fairly tasty. Had to tweak slightly by adding a little more of this and that to suit family preferences, but overall, it will be made again, especially when I need a quick dinner.

California Chicken
This is one of those all-round good recipes that holds up well to substitutions. You could even make this as a sandwich! I subbed gouda slices for the monterey jack and jazzed up my tomatoes by broiling them with a little parmesan cheese and Italian dressing before topping the chicken with them. I also sprinkled a few bacon bits on for good measure. I assembled the finished pieces atop a bed of raw spinach, added a few sliced strawberries, a drizzle of Italian dressing, and it was so good! Definitely on the make-again list!
