Cioppino

Reviewed: Apr. 7, 2015
It was excellent. Of course I did a few changes based on others. I used only about 1 tablespoon butter and then olive oil instead. I slowly cooked the onions down without the parsley and garlic for about 30mins. Then added the two other for only about 5 mins. Ended up using 1 14 oz and 1 28 oz diced tomatoes in a can and then 1 1/2 14oz cans of tomato sauce. Twice as much garlic. No water and 2 1/2 cups wine. Ended up using about 4 cups of homemade chicken broth. I had no oregano so I substituted Italian spices. Also had no crab. I simmered the soup before the addition of the fish/stuff for about 2 hours on low. If you don't simmer then you are going to get a very strong wine taste/smell. Then added the clams/mussels for 5 mins and then the rest for about 5 mins. So so good. Has some great sourdough bread to go with it.

Cola Pot Roast II

Reviewed: Oct. 7, 2012
Wonderful recipe. I followed others advice and seared it first. I also stuck garlic cloves into the meat before cooking and peppered it before searing too. Also used a little vinegar to get the juices off the searing pan into the slow cooker. I used the Mexico Coke (real sugar). Also added one big onion more carrots and cut up a large sweet potato. The only issue was that it took more than 5 hours in my slow cooker. at four hours I cut the meat into cubes and cooked it for a few more hours but this time on low heat. Excellent!!!!!
