Pastel de Tres Leches (Three Milk Cake)

This was my first time making tres leches and it was so easy and so very delicious! I added the homemade toasted coconut, redi-whip, and strawberries. It was a huge hit at my recent pot luck.

Mushroom and Mascarpone Ravioli

I agree with the other reviewers. The filling is amazing but the won top wraps didn't stay together all that well when boiled. I will definitely make these again but will make my own pasta next time. I also used a roasted red pepper alfredo which complimented it all perfectly!

Roasted Rack of Lamb

This was my first time making rack of lamb, but the recipe and the comment recommending how to order it at the butcher (frenched & with the chine bone removed) made it easy! I followed another reviewers suggestion and cooked it at a lower temp for 45 minutes, then increased to 400 for 15, but next time I'll follow the recipe. I like my meat medium rare and the slow cook method had it well done and not as juicy as I expected. I will be trying this again soon!

White Bean Chicken Chili

This is excellent! I baked the chicken with the brown sugar/chili powder paste that was suggested earlier and shredded it. Delicious! I added a jalepino just for extra spiciness, very good with a kick!

Potato and Shiitake Mushroom Gratin

So delicious! I paired this dish with some lamb chops and it was the easy favorite. I halved the recipe as it was only serving 2 of us and there were plenty of leftovers. Otherwise, I followed it exactly as the recipe states. I agree with all the reviews that it doesn't necessary look nice, but you can get past that very fast when you take the first bite!

Double-Cheese Eggs Benedict

I had no idea that eggs benedict could be so easy! After making this for some houseguests one weekend, I now get requests every time anyone is over. So delicious! I use thin-sliced ham and just heat it up on the toasted english muffin before adding the egg and the sauce. I end up using whatever shredded cheese that I have on hand and sometimes add a little more than it calls for. Delicious.
