Adobo Chicken with Ginger

We love this! My only changes were to cook in a slow cooker for 8 -10 hours, used 1/4 cup vinegar, and added 1/2 cup of water. Also, I was too busy to peel and chopped garlic, so I used 2 heaping teaspoons of jarred minced garlic. Will definitely be making this again!

Chicken Noodle Soup

perfect for my Slow-Cooker. here's what I adjusted: I used 6 cups of water instead of 12, and used 6 tsp of Better than Boullion (chicken flavor). I used only half the dried herb and spices (I used the smallest bay leaf I had). I used unsalted butter, and did not have to add any additional salt. I add all of those ingredients to the slow cooker at the beginning, and cooked on low heat for 8 hours. I used Whole Wheat Egg Noodles, which I added at the last 40 minutes of cooking. SOOOO YUMMY! And so simple. I will definitely make this again!!

Slow Cooker Chicken Taco Soup

yummy! i fried the onion in 2-3 tbsp of canola oil, along with 4 cloves of pressed garlic. i used 1 pkt of taco seasoning, plus 1/2 tsp of cumin. delicious, even better the next day.

Pumpkin Pie Bread

a big hit with my family, who would normally prefer chocolate cake or oreos as a snack! my 3 year old daughter kept asking for them as her part of her breakfast or after-school snack. as other's suggested, i double the pumpkin pie spice (6 tsp instead of 3) and used 1 cup of chunky apple sauce instead of the oil; and used 2 cups white sugar plus 1 cup brown sugar. it was great this way, by i think i can get away with less sugar the next time, since i used applesauce.

Easy Oatmeal Muffins

great basic muffin recipe! as others mentioned, i doubled the sugar, using 1/2 cup brown sugar instead of white. instead of milk, i used "buttermilk" (1 tbsp of lemon juice mixed with 2%milk, and allowed to sit for at least 5 minutes). i added about a 1/3 cup raisins and 1/3 cup chopped walnuts. still not super sweet, but very tasty out of the oven w/o butter or jam. my 3 year old loved it! will definitely be making this again, and will probably add more raisins or try other dried fruit like apricots or craisins.
