Vicki's Hush Puppies

Reviewed: Feb. 7, 2009
Loved the recipe, the only reason I'm giving it four stars is I don't keep self rising flour or cornmeal in the house and the poster did specify about the milk. I used 1 cup of each and added 3 teaspoons of baking powder and 1 teaspoon salt. I also added enough milk to get a consistency that was good for me. Very yummy. My guests add more hush puppies than etouffee!

Slow Cooker Stuffing

Reviewed: Nov. 27, 2008
I mixed this up the night before minus the eggs. I used a bag of croutons, I chopped up some rosemary, sage and thyme. I used a teaspoon of poultry season. I used only 2 cups of broth for overnight. The rest was the same. Then the day of I mixed in the eggs and two more cups broth. I had to add a little more broth during cooking. It was perfect. I did cook the gizzards and heart of the turkey with the stuffing, but it was oh so good!

Peanut Butter Mini Muffins

Reviewed: Nov. 13, 2008
I made the following changes I upped the milk to 1 cup and oil to 1/3 cup and used milk chocolate chips. I wish I would have upped the sugar to 3/4 cup but I didn't. I made full sized muffins (12) and cooked @ 375 for 25 minutes. I brought them to work and everyone loved them!

Blueberry Cream Muffins

Reviewed: Jun. 11, 2008
If I would have had 4 eggs has called for I would have given this 5 stars! Yes this a heavy recipe, some are, but it's oh so good. This makes 24 very nice size muffins. It's perfect, not too sweet and not too tart. I did substitute 1 cup brown sugar and 1 cup white sugar for the 2 cups sugar. Perfect recipe!

Swiss Chocolate Cake

Reviewed: Jan. 31, 2008
Extremely disappointed in this. Followed recipe to the letter. I wanted another chocolate cake recipe to add to my "fab" collection. This is not it. Too crumbly, the batter overfilled my two pans. Will NOT make this again. EVER.

It took major tweaking to get it right. IMO a recipe should be able produce results as written.

Very good. I teaked it a little, added some sour cream and used provolone instead. I cooked it in a slow cooker and it was gone at the pot luck before it even started!

The only thing I did different to this recipe was I cooked it in a 8 x 8 pan. I didn't change a thing otherwise. Perfect! I loved it!

Herb Rubbed Sirloin Tip Roast

Reviewed: Apr. 11, 2007
This recipe rocks! I love the seasoning blend! My husband has request this to be a regular in our menu rotation. I know I will be making this again and again! I made this recipe exactly as written, the timing was perfect for me, I like a bloody cut of meat. If I had to feed this to the kids I would leave out the hot pepper.

A Jerky Chicken

Reviewed: Feb. 25, 2007
The only thing I did different was to add the juice of one lime. That said, it was a good recipe. A little too sweet for me, but good. Next time I will add one more habanero pepper, add the juice of one orange and one lime, replace the sesame oil with canola and try that.

Perfect White Bread

Reviewed: Feb. 25, 2007
Very good, nice light loaves. This was one of the best recipes I've made. I've been baking bread 10 + years now and this is almost the perfect white bread. It is wonderful. My kids and hubby love it so much I'm lucky if I get any. I followed the recipe exactly and only changed the oven temp to 375 and cooked about 5-10 minutes longer. Perfect.
