Grilled Salmon I

I have made a version of this recipe and although not exact, same idea so I had to let you know to MAKE THIS DISH!!! My version includes: 1/2 c chopped green onions, 1/4 c brown sugar, 1/3 c bourbon (or apple juice), 1 clove garlic, 1/3 c soy sauce, 2 T molasses, and 1/3 c Dijon mustard. Marinate for 8 hours. It is the best way to prepare salmon, esp for those new to eating fish. Divine!!!!

Bran Flax Muffins

UNBELIEVABLE! I substituted whole wheat flour and applesauce; used 1/4 cup nuts to cut down on fat per other reviewers suggestion. Don't even bother buttering these muffins - MOIST and delicious as is! Wow!! Who knew I'd be baking with flax?! Note: use food processor for carrots and apple once peeled and cored.

Simple Chicken Parmesan

Whole Wheat Banana Nut Bread

Banana Cake VI

It is a very good cake, but because the consistency is so much like banana bread, I'd rather have the bread because it has less fat and calories.

Honey Mustard Dressing II

Perfect dipping sauce! Used Dijon mustard. After tasting sauce, I added 3/4 t. olive oil, 1/2 t. white wine vinegar, 1 T water, and salt & pepper to make dressing. Delicious!!!

Peanut Butter Pie

1/4 of my cream cheese was missing when I went to make this recipe, but went ahead anyway. This is probably why mine wasn't too cream cheesey like most reviewers say. I think this pie tastes like Reese's Pieces! Next time I will chop the PB cups b/c leaving them whole is too rich.

This was definately what I was looking for; however, it needs way more than 1 t. almond extract as someone suggested (sub for anise). Will add more extract + almonds next time. Way too boring this go 'round.

Simple Scones

I expected scones to be dry, but these were quite moist! I would like them drier to go w/ my coffee, but a great recipe none the less. I omitted raisans and sub. 1/2 t. almond extract and sprinkled chopped almonds on top w/ sugar. Divine.

Chicken Marsala

This is very good, but I'll continue to look for a better sauce... needs to be thicker/syrup-y. Omitted cooking wine b/c Rachel Ray says you should only cook w/ wine you'd drink! (and I concur)

Scalloped Potatoes II

These were tasty, but they lacked appeal. I would never serve guests w/ this. Why did mine turn out w/ lumps?! I'll look for another recipe that comes out smoother, but has the same flavor.

Chicken Garlic Pizza

I used a homemade whole wheat dough w/ herbs, which attributed to the flavor of this pizza - regular dough may be too bland. The only thing I wish was different is the flavor of the chicken; it needs a little something. My husband didn't care for this b/c he's a "sauce guy", but I loved it. I recommend 3 T butter, 3 cloves garlic and sliced (instead of diced) roma tomatoes. Will make mini pizzas just for me next time!

April's Chicken Fried Rice

I don't know what makes this recipes SO good (it's just rice and soy sauce flavors!), but it is! Thanks for giving me a recipe that I'll be making over and over using lots of veggies. You won't even need to write this recipe down - do it once and it's a breeze the next time b/c you improvise as you go.

Corn Casserole

The variation that I grew up on included sauteing the onion and 1 small green pepper (adds beautiful color) in the butter; 1 can creamed style corn and 1 can whole kernel corn. I'd encourage you to try these modifications. This is quite the Thanksgiving side dish! Note: start sauteing in an oven safe pan so you can bake it without having to dirty a casserole dish!

Chicken and Bowtie Pasta with Asiago Cream Sauce

This was restaurant quality, but I'd recommend a few changes: a small carton of cream is 2 cups so instead of buying a larger carton for just 1/4 cup more (a bit pricey and I'd rather not have leftover cream to cook w/ b/c of its high fat content) do not add all of the pasta; a whole bouillon is quite acceptable - who's really using 1/4 of it?! I didn't have prosciutto, but it really needs that flavor. I added peas and it completed the meal. Think ahead and reuse the same pots to make fewer dishes!

Chicken Provolone

This was hardly a 'creamy wine sauce'; the wine overpowered the entire recipe, the stuffing was dry... what is everyone else tasting? I salvaged the chicken, but I'm still mad about the other wasted ingredients. How could I have gone wrong on such a simple recipe?

Snow Pea and Napa Cabbage Slaw

I was looking for a low fat version of the traditional Asian salad w/ Ramen noodles and this is it! I only used 3/4 lb cabbage, 1 shredded carrot, etc.; I increased the amount of rice wine vinegar to 3 T while keeping the lemon juice and olive oil the same. I will probably add toasted almonds to make it a meal!

Chess Cake

I'm no baker, so I had no idea what chess cake was - based on the reviews, I gave it a go. I didn't consider, however, that this cake has no frosting; it's hardly a show stopper sitting in the 9x13 pan. This cake was for a baby shower so, I 'frosted' the cake with cool whip, decorated it, and crossed my fingers. Although I think it is far too rich in calories (when I consider how many hours I'd have to workout to burn them off!), people loved the flavor and texture! Some asked what bakery I picked it up at! Fooled them :) Great cake, just lacks appeal!

Tangy Dill Potato Salad

Thank you for the idea to pour the Italian dressing over the HOT potatoes - the flavor of this potato salad is incredible. I omitted the dijon and put in 3 or 4 times the amount of dill. L-O-V-E this recipe. It's a keeper for life!! *I will reduce the amount of mayo next time just to save a few calories - it's creamy enough to make this adjustment.

Oven Roasted Potatoes

I did not have marjoram, thyme, or red pepper flakes (added some hot sauce); turned out delicious. This side dish is really pretty w/ all the herbs coating the potato; the skin (did not peel) was crispy, while the potato was soft. Serves very well with meatloaf (lightly dip some of your potatoes in ketchup... it tastes like fried potatoes mom serves on Sunday mornings!)
