To Die For Blueberry Muffins

The best homemade recipe I've had. The boxed ones are always moist and the homemade ones I've tried are kind of dry, but this recipe isn't, it's moist! To address some other reviews I've read: My batter made a full 8 muffins, filled pretty much to the top. I took advice from others and only used 3T butter for the crumb topping instead of the called-for 4T, since some said it was too buttery; the way I did it with 3T turned out lovely, nice crumb topping. That said, I think this muffin would taste great even without that crumb topping. It obviously adds texture and sweetness, but I think they'd taste great alone as well. I added a little more blueberries than 1C, just cause I love'em! Overall, I'm keeping this recipe in my book for future use, taste great!!

Boilermaker Tailgate Chili

I thought I had an awesome chili recipe, but this stuff is amazing!! A lot does go into it, but trust me, it effects the taste cause this is the best chili I've ever tasted, hands down. I made it in the crock pot, (after cooking the meat of course) and I have one of those big oval crocks, and it was to the top, no room to add another sprig of anything, so just know that this does make a ton!

Greek Orzo with Feta

This dish is very light-tasting, enjoyable on a hot summer's day...I just didn't love it. The man of the house liked this much more than me. I would possibly make this again, take as a side dish for an outside get-together or seomthing like that. It didn't taste bad, by any means, just didn't "wow" the taste buds.

Cheesecake Topped Brownies

So, these were OK, didn't taste bad, just think there are better recipes out there that combine cheesecake and brownies. I doubled the cheesecake part, and baked about 10 mins longer because the middle portion wasn't done. Having done this, I think it over-cooked the top of the cheesecake mixture giving it a slightly burnt taste. I understand this could all be my fault since I doubled it, but was following some advice of other reviewers...and I do like to taste the cheesecake. By looking at the picture, I wanted a thicker cheesecake part. Also, as another reviewer noted, when I cut my brownies to eat them, the cheesecake separates from the brownie...not a big deal, still edible, just have to hold together. I like these 2 tastes together, just probably won't make this particular recipe again as I've made some other variations I like better, like cheesecake-topped cupcakes.

Feta-Stuffed Hamburgers

Had these tonight, they are a good and I'm glad we tried them, however next time I would just make "feta-topped hamburgers" instead of stuffing them. Stuffing them made them very thick, and it would just be much easier to top them, and have the flavor across the entire top of the burger. Also recommend using goat cheese; the ones tonight half were feta and half were goat cheese.

Mushroom Orzo

I previously rated this after making it once. Since then, I have made it more and played with the recipe just a tad, and now I LOVE it!! Have made it several times and I crave it. For the mushrooms, I just used button mushrooms, and 1/2C as the recipe called for turned out to be 3 mushrooms...not enough, at all. I now make it with like 10 button mushrooms, I'd even add more. I use chopped white or yellow onions instead of the pearl, and I use one minced garlic clove instead of garlic powder. I also increased the wine to 2/3C, I really like that wine flavor. So, with those changes I now love this recipe and plan to make it a lot!

Baby Back Ribs

Best ribs I've ever had...If you like the meat to fall off the bone and not have to "work" for your food! Also, I don't like to eat fat, so when the meat/fat falls right off the bones like it does, it's very easy to only pick at the meat and not have to chew on fat; I really liked that part of these. Also just so tasty. I did do the rub as some previously stated, and I also put on BBQ sauce. I would say the rub recipe I used off here, was very spicy. My kids had real hard time eating these due to spice, so I would tweek that next time. So easy to cook though in foil and clean-up was a breeze. My foil packets did leak slightly and I was unable to get the baked-on sauce off the pan, but I used an old pan. So if you use a good baking pan, I would lay down a layer of foil to protect it in case packets leak.

Downeast Maine Pumpkin Bread

After reading reviews I just had to make this for Christmas, but I was disappointed. It didn't taste bad or anything, just didn't have a lot of taste and nothing about it "wow'ed" me. I won't make this again.

Tuna Noodle Casserole

Love this recipe!! I've been making tuna noodle casserole for years but this just tastes a little different and it's awesome! I really think adding the veggies and the mayo is what makes it different. I do add peas to mine.

Creamy Hot Cocoa

Made some the other night so I could add some Rum Chata to it for a nice adult beverage, and this hot chocolate recipe is really good!! Everyone in the house loved it and couldn't believe it was homemade.
