About this Cook
My favorite things to cook
I honestly don't enjoy cooking all that often. Maybe if I had unlimited space, time, and money....... But every now and then I get in the mood to try something new and allrecipes is usually where I turn. I like recipes that are easy and don't have 5000 ingredients.
My favorite family cooking traditions
My favorite dish my mom used to make is Meatballs and Mushroom Gravy. She would serve it over egg noodles. I also loved her broccoli & cheese casserole and several other dishes. She was great cook and enjoyed cooking for her family. I didn't inherit that gene, but I have fond memories of the things she used to make for us. :)
My cooking triumphs
I make some pretty awesome chicken enchiladas, a recipe I got from my brother.
My cooking tragedies
Rice Krispy Treats- apparently you cannot use margarine instead of butter. Also, I tried a Macaroni and Cheese recipe off this site a few weeks ago and it turned out yucky. (but I think it was the recipe...)

Hash Brown and Egg Casserole
I changed the recipe a little bit and it turned out pretty good. I used 1lb of sage sausage, hash rounds instead of shredded, omitted the onion, 8 eggs instead of 5 3/4 cup of milk, onion powder,, garlic powder, ground red pepper, salt and pepper, and a bag and a half of mexican shredded cheese. Pretty much followed the assembling directions except I cooked the hash rounds first. I used a metal pan so I only cooked it for 45 min, 15 of that with the foil off. It tastes really good. Could possibly stand to be just a tad less dry, so next time I will try cooking it just a little less.
