Banana Chocolate Chip Bread
Love this recipe! Very moist and flavorful! My changes: I do not add any salt because I use salted butter so no need to add extra. Also, I add 1 tsp. vanilla extract, use 1/2 cup granulated and 1/2 cup brown sugar (as most here have done), and I add 1/2 cup chopped walnuts. Yummy!! Also, I bake this in a glass dish (not a bread pan), and cut and serve it like a coffee cake. It is always a hit with friends and family! :)

Quick Black Beans and Rice
As written, I was not a big fan. I don't really care all that much for instant rice and throwing it all in the same pot just made it an unpleasant texture. So I made a few changes the second time and really enjoyed this dish! First, I switched to long grain rice and cooked it separately. Meanwhile, I sauted onions and fresh minced garlic in some olive oil, then added the beans (I love beans, so I upped it to two cans), tomatoes and cooked rice and switched the oregano for some fresh basil. Oh so yummy!!!

Penne with Spicy Vodka Tomato Cream Sauce
Very tasty! I subbed ground turkey for the sausage and basil for the parsley. Soooo good!!!
