Strawberry and Peanut Butter Cream Cake Roll

Reviewed: Jan. 28, 2012
YUM! This recipe was excellent! Instead of 1 cup flour I used 1/2 cup flour and 1/2 cup baking cocoa. Then for the filling I used milk chocolate Betty Crocker icing. It was yum!!! Absolutely delicious. I didn't do a great job rolling it, and it stuck a bit, but that's because I was trying out a silicone mat for the first time and used that instead of the 'prepared towel'. Had I stuck to the recipe's instructions I'm sure it would've turned out better! But it still looks half-decent, and it tastes AMAZING.

Orange Chocolate Muffins

Reviewed: Jan. 9, 2012
Absolutely brilliant recipe. Like others, I split the batter in two and used 1/2 cup cocoa as substitution for 1/2 cup of the flour in one half of the batter. I used chocolate chips instead of grated chocolate. I didn't have any sour cream, nor plain yoghurt, so I used 1/2 cup of raspberry yoghurt instead and it worked out fine - added an extra, fruity dimension to it! I also used a tsp of pure orange essence and didn't use any orange peel. The cakes turned out beautifully. I used a brand new set of silicone muffin trays and they were so evenly baked and beautifully risen and cracked on the top. The cupcakes are very light, fluffy, and have a juicy fruity taste complimented well with the chocolate. Absolutely superb! The batter made 12 large muffins and although I was going to take them over to a friend's house tonight I think I am tempted to just save them all for myself...!

Challah

Reviewed: Dec. 26, 2011
Absolutely delicious! I'm new to making bread, so cheated and used a breadmaker instead of doing it by hand. I just put all the wet ingredients into the maker first (beat the eggs), then added the dry ingredients, made a well in the flour and put in the yeast, then turned the breadmaker on. I must mention that I did add only 3/4 tsp of salt as 1tbsp seemed too much to me. I also used canola/olive oil instead of vegetable, as that is all I had in the pantry. An hour later, I had a beautifully risen and smooth ball of dough. I 'punched it down' just as the recipe instructed, and from that point on did as the recipe said (dividing it up, and braiding it). When the loaves were done rising, I topped with the beaten egg/water mixture, and sprinkled on a wealth of poppy seeds, then put them in the oven to bake. When the loaves came out of the oven they looked absolutely mouth-wateringly delicious! As a novice bread-baker, I am so proud of what I've been able to make. This really is a fantastic, fool-proof recipe. The dough was smooth and elastic, and once baked the bread was super light, fluffy and airy. It turned out perfectly, although perhaps next time I'll add a tad more sugar as it lost a lot of sweetness after the baking (the dough tasted sweet but once cooked it wasn't as sweet). I'm not sure whether I would have been quite as successful had I attempted to do it by hand, but it's good to know that the breadmaker can be an effective aide. Will definitely make this again!

The Best Pavlova

Reviewed: Dec. 25, 2011
This recipe worked a treat! I followed the recipe exactly, and the outcome was great. The meringue base was perfectly light, and crisp on the outside/chewy on the inside. Absolutely brilliant. I used CoolWhip instead of cream for the filling, and topped it with strawberries. A perfect dessert for our Christmas dinner!
