Buttered Ginger Sauce

First, I didn't have fresh ginger. I used a teaspoon of grated ginger. Maybe that affected the taste because this was way too peppery. I added a double dose of parmesan,1/2 cup of mozzerella, and a dash of milk to thin the pepper out. It wasn't bad but next time I'll put way less pepper in.

Baked Chicken with Peaches

This is awesome. I marinated it for two hours first in some store-bought terriyaki thing. Didn't have any cloves and forgot the lemon juice, but otherwise followed the recipe. Oh, and used a casserole dish with lid as someone suggested. I added the cornstarch, but my 'sauce' never thickened. That's ok. The spooned-on juices were still good. Serve over rice.

Cream Cheese Chicken

This was fantastic. I thought all the portions were fine and the tastes were fine together. It's very messy to make. The hard part was folding the cream chees into the chicken, then having to somehow coat it in the sugar mixture and nuts. I had to dunk it in with both hands and try to hold it all together. The outcome is worth it, but can anyone suggest an easier way?

Light and Spicy Fish

My family loved this. I have never like fish, but I managed to down four bites of this which is the most fish I've ever eaten in my life. This was SO simple to make.

French Onion Soup I

This was delicious. I would change the portions next time in the following ways: 3tbs butter; 2 small onions; 1/3c wine; 2 cans uncondenced beef broth. This is a note as much to myself as anyone. These portions will work out better in my oven bowls instead of having too much like I did last time. The onions are very sweet and the broth is great.

Santa Fe Veggie Quesadillas

This, um, didn't quite come out right. When I slid it onto the plate, the edges had all flopped in on the middle and there was corn and beans all over the place. I tried to flip it onto another tortilla, but that didn't, um, adhere to the stuff in the middle and when I took a bite the bottom tortilla just stayed on the plate. It was very good though. I agree that some of the portions were too large. Next time I'll use a bit less of the ingredients. Except the cheese. Gotta use lots of cheese ;)

Barley and Mushrooms with Beans

I give this recipe only a four because while I really loved it the first day I made it, it just wasn't very good as leftovers. Maybe it's just me. It was definitely good the first night. Worth it. Oh, and I put it in a tortilla with cheese as suggested. Delicious.

Irish Soda Bread I

This was descent. It is moister than other soda breads. I added more raisons and a tablespoon of carraway seeds, but found it didn't have enough seeds for me. Which made it a little bland for my taste. I gave the extra loaf to some friends (who've never had Irish soda bread) and they say they liked it.

Cranberry Loaf

This was all right. I used whole dried cranberries, but chopped would have been better. This was a little too tart. Maybe next time I would replace half the cranberries with raisons.

Whipped Mashed Potatoes

This was my first time making mash potatoes that didn't come from a box. I think I've been spoiled by the boxed flavors because I thought these were bland. I added buttermilk, chives, salt, two kinds of pepper, and onion powder, but it wasn't until I put garlic salt on that I was pleased (I think all that other stuff wasn't necessary. So if you're looking to add some flavor to this I recommend the garlic salt. Plus, I just couldn't seem to get all the potato chunks to mash. Oh well!

Spinach Salad I

This salad did not work out for me. The dressing was awful. It came out in a gloppy gluey mess and wouldn't coat well. Plus the onion flavor was too strong for me. Since everyone else seems to like it, must just be me.

Apple Radish BBQ Ribs

Very good and easy to make. If you're expecting it to have a discernable apple flavor, don't. It mostly takes on the taste of the bbq sauce. But the meat comes out nice and juicy.
